In a large pot, cook the sausage over medium-high heat, stirring occasionally, until sausage is crumbled and no longer pink, about 5 minutes. Use a slotted spoon to transfer sausage to a paper towel-lined plate. Drain grease, reserving 1 tablespoon of the drippings in the pot. 2. BROTHY TORTELLINI 🍲 This is loosely inspired by Italy’s tortellini in brodo, a simple dish that literally translates to “tortellini in broth”. My (very much not traditional) version is veggie friendly and made in a matter of minutes by using shop bought tortellini & stock! Ingredients for two servings: 300g spinach & ricotta tortellini (or flavour of choice) 3 diced garlic cloves 1 finely diced shallot Roughly 800ml good quality vegetable stock Juice of ½ to a whole lemon A handful of finely chopped chives A sprinkling of cheese to serve e.g. parmesan or cheddar Recipe: Fry shallot and garlic in a little olive oil for a couple of minutes until softened. Pour in the stock and bring to a gentle simmer. Add the tortellini straight into the broth and cook according to packet instructions. Season the broth with salt, black pepper, and the juice of half to a whole lemon to taste (I like mine quite lemony) 🍋 Ladle into bowls and finish with grated parmesan, chives & and a final drizzle of olive oil.
