Мне 4 года, я стою перед большим эмалированным тазом, в котором медленно бурлит сладкий виноградный сок, а рядом на вытянутом шпагате уже висят в ряд теплые чурчхелы, которые только что приготовили.
Я как сейчас помню теплое блюдце с горячим виноградным киселем у меня в ладошках, в который я макаю палец. Этот кисло-сладкий соус и аромат я запомнил навсегда.
Появление этого десерта всегда говорило о том, что настала осень, а значит, подошло время приготовления вина, за которым всегда следовали большие застолья и гулянья.
Самое удивительное, что чурчхелу ожно готовить из абсолютно любого фруктового сока, не только виноградного, да и начинка может быть на ваш вкус, начиная от орехов, заканчивая сухофруктами.
Ниже пару советов, которые вам помогут приготовить свой десерт.
🍇 Сок, как сказал уже, можно любой, в том числе из пакета, но если вы понимаете, что он у вас водянистый, выпарите его на 20%-30%.
🍇Если решили хранить чурчхелу всю зиму, немного обжарьте орехи в духовом шкафу. Так они у вас не заплесневеют.
🍇Любите эксперименты, как я, - в готовый соус можно добавить любые специи, будь то корица, семена кунжута или что-то ещё. Так вы получите очень необычный внешний вид и вкус.
🍇Если в чурчхеле для вас (как для меня) главное - это фруктовая основа, а орехи вторичны 😆, окунайте их в соус дважды с периодичностью в 5 мин.
🍇Перед тем как опускать орехи в горячий соус, дайте ему немного подостыть, иначе он «ляжет» слишком тонким слоем
🍇И не забудьте первый нанизанный орех или сухофрукт зафиксировать узлом, иначе все у вас слетит с нитки 🧵

🌰250 г пшеничной или кукурузной муки
🌰300 г орехов или сухофруктов
🌰100 гр любимого шоколада

Base:
• 7 dates
• ½ cup almonds

Filling:
