TOSopes de Tinga… aka little boats of flavor because we’re sailing straight into deliciousness 🚤🌮😂
Crispy edges, juicy smoky chicken, and ALL the toppings… these sopes did NOT come to play 😮🔥 (and neither did our appetite 😅)
We used @elcomalproducts White Corn Sopes to keep it easy and authentic 🙌🏽 because honestly… we’re not out here making masa from scratch today lol
✨ Sopes de Tinga Recipe ✨
Ingredients:
• @elcomalproducts White Corn Sopes
• 4 lbs chicken breast 🐔
• 7 tomatoes 🍅
• 8 garlic cloves 🧄 (yes… we like it garlicky garlicky)
• 1¾ white onion 🧅
• 3 bay leaves 🌿
• 6 oz chipotle peppers in adobo 🌶️
• 1 tbsp chicken bouillon
• ½ tbsp black pepper
• 4 celery sticks
• 1 tbsp salt
• 1 tbsp cooking oil
Directions:
1. Boil chicken with ½ onion, celery, garlic, bay leaves, black pepper, and salt. Shred once cooled (aka arm workout 💪🏽😂).
2. Sauce: Blend tomatoes, garlic, onion, chipotle, bouillon, and water until smooth. (If it smells amazing… you’re doing it right 😏)
3. Sauté sliced onion in oil, add chicken + sauce, and let it simmer 5–10 mins until it’s juicy and saucyyyy 🔥
4. Lightly fry your sopes (golden = perfect 😍)
5. Build them up: refried beans, tinga, cabbage, crema, queso fresco, salsa… basically stack it like you mean it 😮💨
Careful… these disappear faster than “I’ll just have one” 😅

DISopes De Carne Enchilada Recipe:
Carne Enchilada:
3.5 lbs beef tri tip roast (cut in cubes)
3 liters water
1/2 yellow onion
4 garlic cloves
2 bay leaves
8 guajillo peppers
2-4 chile de arbol peppers (to taste)
2 tbsps salt
1 1/2 cups (reserved beef stock)
Instructions:
Add beef to a 5 quart pot then add 3 liters of water or until meat is completely submerged in water. Cover on high and once it reaches a boil remove all the scum from the surface, then add onion, garlic cloves bay leaves, guajillo peppers, chile de arbol and salt. Cover on medium high heat for 2 hrs or until meat is tender. Remove meat from the pot and shred with a hand mixer or with a fork. Then add all of your chiles to the blender, (onions + garlic that you boiled) + reserved beef stock and blend.
To a hot oiled cast iron, add your shredded beef and season with @chef_merito steak seasoning! Fry until meat is lightly golden brown them add your sauce and fry it with your meat for 5-7 minutes on high heat. Move to the side to cool.

Sopes:
Corn Masa:
2 cups maseca nixtamasa
1/2 tsp salt
1/2 cups hot water (or until masa is pliable but not sticky)
Instructions:
Knead until your masa builds air bubbles and you hear a popping noise. Make 8 even sized masa balls and let them rest covered for 30 minutes. 30 minutes later put your masa ball between 2 pieces of parchment paper then squish with a big plate. Add to the comal for 1 minute (or until the edges start to turn yellow), flip and heat for another minute, then on the third flip tap it in the middle until it poof. Remove from the pan and right away start to pinch the sides all around the sope.
Now to a hot cast iron with 1 inch of avocado oil, add your sopes and fry them for 30 seconds on both sides. (Don't overfry them, fry them just until they reach a nice yellow gold color). Let all the excess oil drip in a cookie rack.
Now assemble your sopes with refried beans, carne enchilada, lettuce, mexican crema, queso cotija, pickled onion and a delicious salsa molcajete🔥
