Sourdough Bread Recipe for Beginners Step-by-Step Tutorial INGREDIENTS • 500g unbleached bread flour (4 cups) • 350g water (1½ cups) • 100g active sourdough starter (⅓ cup) • 10g salt (1¾ tsp) DIRECTIONS Starter Prep: Feed your starter and let it peak. I feed my starter the night before so it’s ready to use in the morning… 12g Starter 60g Flour 60g Water *You can feed your starter however you want. Step 1: Mix the Dough Combine starter + water. Mix until foamy. Add flour and salt. Mix until dough forms. Cover and rest for 1 hour. Bulk fermentation starts now. Step 2: Stretch & Folds Do 4 sets of stretch & folds, 30 minutes apart. Keep dough covered between sets. Step 3: Finish Bulk Fermentation Cover dough & let rise at room temp until ready. Timing will vary based on environment. Step 4: Shape the Dough Dump dough onto a lightly floured surface. Shape into a round or oval. Transfer to a banneton or proofing basket (seam side up). Cover. Step 5: Cold Proof Refrigerate for 12–48 hours. Step 6: Preheat Preheat oven to 450°F with empty Dutch Oven inside for 45 minutes. Step 7: Score & Bake Place dough on parchment paper, score and transfer to hot Dutch oven. Cover with lid. Step 8: Bake Bake at 450°F for 30 minutes (lid on). Remove lid and bake 12-15 more minutes until golden. Step 9: Cool Remove bread and let cool at least 1 hour (2 hours is best) before slicing. Let’s not overcomplicate things. There are three main steps to making bread. Step one: mix dough Step two: let it rise Step three: bake it The rising process takes a while so I spread out the “mixing” by doing a few rounds of stretch and folds every 30-60 minutes. Once your dough has roughly doubled in size you shape it then let it rise again. Doing this final proof in the fridge helps slow down fermentation, allowing your bread to have a more complex flavour profile. There are lots of baking methods - I often use a preheated Dutch oven but recently got the @brodandtaylor baking shell (as seen in this video) and I’m loving the results. For both methods I bake at 450F covered for 15 minutes and uncovered for 20 minutes. The most important thing to remember is that temperature controls how long it takes for your bread to rise. Warm dough rises faster than cool dough. If you keep the dough warm enough this can be done all in one day. I like to spread it out over two days for best flavour — and to fit my schedule better. 🌾 SOURDOUGH BREAD RECIPE 🌾 500g unbleached flour 325g water 100g active & bubbly starter 8g salt This recipe is for 1 loaf (I doubled the batch in the video because I was making 2 loaves) ________________________ Steps: -Mix starter & water into a bowl with a danish whisk -Add in flour and stir until combined, then mix by hand until fully mixed. Cover & rest 30min. - Add a splash of water & add in 8g salt. Pinch into dough and mix until fully combined. Cover and rest 30min. - Complete 3 sets coil folds (I have the full clips on my story highlights “sourdough”) - Cover & rest for bulk fermentation (counter). Wait until the dough doubled in size. This can take 3-6 hours. - After dough has doubled, shape your dough into a boule or batard & place into a floured banneton. Place into fridge overnight for 12-18 hours. ________________________ Bake day: Preheat oven with Dutch oven on 500F for 1 hour. - Take bannetons out of the fridge - Get parchment paper ready and place boule or batard unto the parchment paper. Sprinkle a little flour on top and score. - Place into preheated Dutch oven -Bake 20min on 500 F with lid ON -Bake 15-20min at 425 F with lid OFF Notes: I have a story highlight “sourdough” showing all of these steps with the full video. Same Day Sourdough Bread! 1 1/2 Cups warm water (300g) 1 Cup Active Sourdough Starter (175g) 2 tsp Salt (10g) 3 Cups Bread Flour (450g) 1. Mix all ingredients 2. Rest 30 minutes 3. Stretch & Fold 4. Rest 30 minutes 5. Stretch & Fold 6. Rest 3-4 hours 7. Shape 8. Place in proofing basket and rest 1 hour on the counter 9. Rest in fridge for 1-2 hours 10. Bake 11. Cool & Enjoy! The key to doing this in the same day is using a heaping cup (or 175g) of active sourdough starter, and keeping the dough warm! And FYI- warm = 80-85 degrees… don’t over do it! Here are some ways that you can keep your dough warm: 🔥Use a Proofing Box: Create a simple proofing box by placing your dough inside a large, lidded container or a plastic box, then placing a small bowl of warm water inside the container to create a humid, warm environment. 🔥 Many ovens have a light that generates just enough warmth to maintain a consistent temperature for dough. Put the dough in the oven with just the light on (not the heat) for an ideal warm setting. 🔥 Set a heating pad on low and place your bowl of dough on top. You can cover the dough with a cloth to retain warmth, ensuring it doesn’t overheat. 🔥 Heat a damp towel in the microwave (be careful not to overdo it), then wrap it around your dough bowl. The warmth will help keep the dough at a steady temperature. 🔥 Keep it on top of a warm kitchen appliance. I love keeping my dough on the countertop above my dishwasher and running the dishwasher! My biggest piece of advice for sourdough- take some time to understand the process and it will make the world of difference. Equipping yourself with knowledge and a good method is the key to success. Sourdough doesn’t have to be complicated, but with anything worth learning- there is an easy way and a hard way to doing so. I went down a lot of rabbit holes and multiple sources. There was a lot of confusion and failed attempts at first. Shaping a sourdough loaf takes more than anything else, practice. watching others doing it helps you learn, but, like my husband (who has tried couple of times himself and saw me doing it way too many times by now) says it’s like learning any other new skill. It looks easier than it is when you actually get to do it. Feeling clumsy with your first many loaves is normal. First of all, decide on the shape. And choose your proofing basket and dutch oven (if you use one) accordingly. I prefer an oval loaf to a round one, easier to slice, but truth be told, it also opens nicer when you bake it than a round one Use a scraper, that’s one item I couldn’t do it without. Especially when you deal with a sticky dough Dust the working surface and your hands with flour. And also the banneton Use a gluten free flour (rice or buckwheat are the ones I tend to use). These do not form gluten bonds with the dough, which helps creating that layer which will avoid the dough sticking to the banneton Don’t be afraid to touch the dough. Plan the movements and be quick when you do it. Otherwise it will just stick more and more Best to not have dough on your hands or on the scraper, as this will only make the dough stick even more If you pre-shape (usually in a round shape), make sure the dough has relaxed enough before you handle it again for the final shape. If the dough is tense and doesn’t relax, all you do is to force it into the final shaping, risking tearing it. Also, you tighten too much which will lead into a denser/tighter crumb. Next time you use the same recipe, skip the preshaping Pre shaping is optional and it’s an opportunity to give additional tension to the dough, and bring a messy dough into a smooth uniform ball, which will facilitate the final shaping. Very useful when you make a large piece of dough that requires splitting For the banneton, use a liner if you have one. Even if the dough sticks to it, it’s easier to take it out, than from the rattan basket. Also easier to clean! Do you need a sourdough method that fits in with your life and not the other way around? This routine is PERFECT for busy schedules, especially 9-5 workers. ⬇️ Make sure to save this for next time you want to try the overnight method. 📍 The very first few times I tried this method, I woke up to overproofed dough. When you have kids, sometimes your mornings get thrown off schedule, so shaping dough isn’t at the top of the priority list. With time, as I started to understand the science of sourdough more and more, I was able to nail this method down and use temperature to my advantage.   When I make sourdough in the day, my recipe calls for 100g of starter, but in case you didn’t already know this, the more starter you use, generally the faster your dough will proof. So what I suggest doing for your overnight method is dropping down to about 70g of starter. This will slow down your bulk fermentation a little bit. I found (especially in the summer months) that I needed to use cold water (I used my cold filtered water from my fridge dispenser). Using cold water slows down the proofing process.  So here's what you will do. 2 hours before you plan on going to bed. Recipe: 350g water 70g starter 500g bread flour (or high protein all-purpose flour) 10g salt - Mix your dough  - 1 hour later, do your first round of stretch and folds - And then do 2 more stretch and folds (or coil folds), 30 minutes apart.  - Cover your dough with a damp tea towel/bowl cover and leave it at room temperature overnight to bulk ferment. - In the morning, lightly flour (if needed) your work surface, turn the dough out, and gently pre-shape it into a round ball. If you have time, let rest for 10-15 minutes, and then shape into your boule or batard.  - Place the dough in a floured proofing basket, seam side up, and stick it in the fridge. You can cover it with a tea towel. - It can stay in the fridge until you’re ready to bake (ideally within 48 hours). Bake and enjoy. 🥖 Make it work for you.
