The smell of cinnamon apples and the warmth of tradition fills our kitchen, and my heart. Apple Cake (Kosher for Passover) Cake: • 6 eggs • 1½ cups sugar • ⅔ cup oil • 1½ cups cake meal • 5 Granny Smith apples, peeled & sliced, tossed in brown sugar and cinnamon Topping: • Icing sugar Beat eggs with sugar and oil until light. Fold in cake meal. In a lined square tin: Pour ⅓ of the batter Add ½ the apples Another ⅓ batter Remaining apples Finish with final layer of batter Bake at 180°C for about 1 hour. Cool and dust generously with icing sugar. Ultimate Carrot Muffins 🥕 Recipe Dry Ingredients: * 2¼ cups (326g) all-purpose flour * 2 tsp baking powder * 1 tsp baking soda * 1 tsp fine sea salt * ½ tsp each: allspice, cardamom, cinnamon, ginger, grated nutmeg Wet Ingredients: * 1½ cups (260g) packed light brown sugar * 1 cup (240ml) extra-virgin olive oil * 4 large eggs Fold-In Ingredients: * 2 cups (220g) coarsely grated carrots (freshly grated only) * 1 cup (225g) frozen, thawed, finely chopped pineapple * 1 cup (125g) chopped raw walnuts (optional) * ¾ cup (110g) raisins (optional) Cream Cheese Filling/Frosting: * 8 oz cream cheese, softened * 1 cup powdered sugar * 1 tsp vanilla * Pinch of salt Optional Crumble Topping: * 1 stick butter * ½ cup each: rolled oats, brown sugar, AP flour * 1 tsp salt To Make Muffin Batter: 1. Preheat oven to 325°F (163°C) and line a 12-cup muffin tin. 2. Whisk dry ingredients together. 3. In stand mixer, beat brown sugar, oil, and eggs (3 min on low). Gradually add dry mix in 3 parts, mixing until smooth. 4. Fold in carrots, pineapple, walnuts & raisins if using. Filling/Frosting:
Beat cream cheese, vanilla & salt until creamy. Add powdered sugar, beat until smooth (3 min). Transfer to piping bag. Crumble (Optional):
Mix all crumble ingredients by hand until clumps form. To Bake: 1. Divide batter between muffin cups. 2. Pipe ½ of the cream cheese mix into the center of each muffin. Refrigerate remaining frosting. 3. Add crumble topping if using. 4. Bake 25–35 min at 325°F, until golden and set. 5. 🍓 SOFT SOURDOUGH STRAWBERRY ROLLS The fluffiest texture ever✨Recipe below or comment “STRAWBERRY” and I’ll send it to you 🌸 Ingredients Tangzhong * 36 g all purpose flour * 145 g milk Dough * 450 g all purpose flour * 4 eggs * 60 g sugar * 120 g sourdough starter * 40 g milk * 12 g salt * 175 g butter , softened * Tangzhong from above Strawberry Filling * 400 g strawberries , chopped * 100 g sugar * Juice of ½ lemon * 1 tbsp psyllium husk or chia seeds / cornstarch Frosting * 115 g cream cheese * 60 g powdered sugar * 30 g butter , softened * 1 tsp vanilla extract * 2 tbsp strawberry filling Instructions 1. Make tangzhong by cooking 36 g flour and 145 g milk over medium heat, stirring until thickened. Let cool completely. 2. In a stand mixer, combine flour, eggs, sugar, sourdough starter, 40 g milk, salt, and cooled tangzhong. Mix briefly, then rest 30 minutes. 3. Knead the dough for 5–8 minutes, then gradually add 175g softened butter. Continue kneading until the dough is smooth and elastic. 4. Place the dough in a greased or glass bowl. Cover and let it rise for 2–3 hours at room temp, then refrigerate overnight. 5. For the filling, cook strawberries, sugar, and lemon juice in a saucepan until juicy. Thicken with psyllium husk and cool. 6. Roll chilled dough into a rectangle, spread filling evenly, then roll into a log. Slice into 8 rolls using unscented dental floss. 7. Place rolls in a buttered baking dish. Cover and proof for 3–4 hours, or until doubled in size. 8. Preheat oven to 180°C (350°F). Bake rolls 25–30 minutes until golden and cooked through. Cool slightly. 9. Mix cream cheese, powdered sugar, softened butter, vanilla, and strawberry filling to make frosting. Carrot Cake 🥕 What screams spring louder than carrot cake?? I'll wait. A few weeks ago, my friend made me taste the most insane carrot cake, and I just knew I had to recreate it. This cake is super moist (ugh), ridiculously flavourful, not too sweet, and just the kind of dessert that removes your soul from the winter blues that is finally coming to an end. Also theres veggies in this cake so its basically a salad.. with a bit of sugar and cinnamon... topped with cream cheese frosting type of salade. Also - NO grated fingertips made their way in that batter. #achievementoftheweek INGREDIENTS: Cake: - 1 cup oil - 4 eggs - 1 tsp vanilla - 1/2 cup sugar - 1/2 cup brown sugar - 2 cups flour - 2 tsp baking soda - 2 tsp cinnamon - 3 1/2 cup grated carrots (about 4 large carrots( - 2 pinches of salt Frosting: - 1 1/4cup cream cheese (firm) - 3/4 cup icing sugar - 2 tbsp heavy cream - 1 tsp vanilla INSTRUCTIONS: 1. Preheat oven at 350F. 2. Start by grating carrots, and set them aside. 3. In a large bowl add oil, sugar, and vanilla, and mix until combined. Then, add eggs and mix until combined. 4. Add in dry ingredients - flour, baking soda, cinnamon, and salt. Mix until just combined. Add in grated carrots, fold them in. 5. Transfer into greased pan, and bake in the oven for 45-55min, until brown and knife comes out clean. 6. While the cake cools prepare frosting - combine all ingredients and mix until smooth, most delicious frosting forms (those vanilla specks tho🤤). 7. Frost generously. Like, emotionally. Never enough. Slice, serve, and pretend its healthy. ⚠️ Warning: one slice will never be enough.
