Cantonese-Style Steamed Fish Ingredients * 2 7oz white fleshed fish fillets(Chilean Sea Bass is my fav) * Salt * Shaoxing wine * 1 large knob ginger * 5 scallions * 2 tbsp light soy sauce * 1.5 tsp sugar * 1 tsp sesame oil * 3 tbsp warm water * 3 tbsp neutral oil Instructions 1. Season fish with salt and lightly drizzle Chinese cooking wine over the fish. 2. Peel and julienne ginger as thin as possible and slice a few pieces to lay on the bottom of the plate. 3. Cut scallions into 3 inch segments. Save 4-5 segments for the bottom of the plate and thinly slice the rest lengthwise. 4. Add the sliced ginger and scallion segments to the bottom of a plate and place the fish on top. 5. Steam the fish for 10-12 minutes on medium heat while you make the sauce by combining soy sauce, sugar, sesame oil, and water. 6. Remove the fish draining out all of the liquid and add the julienned ginger and scallions on top. 7. Pour the sauce over the fish and heat oil right before it starts to smoke. 8. Serving fish at Lunar New Year is believed to symbolize a surplus of food and money and a year filled with prosperity and success. Serving the fish whole, including head and tail, also represents unity and togetherness. Childhood taste buds unlocked with this recipe 🥹 I have always loved this taste of ginger even as a kid! Recipe: Ginger Scallion Steamed Fish 🫚 * 1 1/2 - 2 lb Striped bass or sea bream, cleaned, gutted and scaled (could substitute for filet with or w/o skin * 4 stalks of scallions (green onions) * 3 inch knob of ginger, peeled and thinly sliced (or ~ 1/2 cup) * 3 cloves garlic, whole and peeled Sauce— * 3 tbsp soy sauce * 2 tbsp shaoxing wine * 1 tsp sugar * 1/4 tsp black pepper * 3 tbsp avocado oil or any neutral oil of choice 1. Prep the aromatics by trimming off white parts of green onions into 2-3 inch pieces. Then thinly slicing the green onions into 2-3 inch slices. Optional: Place in ice water to curl them up for 5 to 10 minutes, then strain and pat dry. Peel and thinly sliced ginger into thin strips ~2-3 inch slices. Save a few pieces of ginger (the ends pieces) to stuff the cavity of the fish. Set everything aside. 2. Clean and prep the fish by patting dry cutting 3 parallel cuts into the fish down to the bone but not through. My card should be 1-1 1/2 inches apart. Stuff the cavity of the fish with garlic cloves, scallion ends, and ginger. Place on a large plate. (if using fillet just lay the fish on top of the aromatics on a large plate.) 3. In a large pan or wok, bring water to a rolling boil, ensuring there is enough water to come up right under your steaming rack. 4. Place the plated fish on top of the steamer rack and cover the pan/wok with a lid. Steam until fish is cooked through. This will take 8 to 15 minutes, depending on the size of the fish. Look for the fish to become opaque and that it flakes easily with a fork. 5. Meanwhile, in a small pot combine soy sauce, shaoxing wine, sugar, and black pepper. Mix until sugar is dissolved and bring to a simmer. Turn off the stove and set aside. 6. Once the fish is cooked through uncover and carefully remove the fish from the steamer then pour out the broth from the fish. I remove it because this could be extra fishy in taste. CANTONESE STEAMED FISH is one of my favourite ways to enjoy fresh fish. It’s simple, delicate, and packed with flavour! 🐟🥢 Seasoning Sauce - 2 tbsp light soy sauce - ½ tsp salt - 1 tsp sugar - ½ tsp sesame oil - 2–3 tbsp hot water For the Fish - 450g delicate white fish fillets (halibut, cod, or bass) - 1 large thumb-sized piece of ginger, julienned - 2–3 spring onions, julienned (white and green parts separated) - 2–3 tbsp neutral oil Start by making the seasoning sauce. In a small bowl, mix together the light soy sauce, salt, sugar, sesame oil, and hot water until the sugar fully dissolves. Place the fish fillets on a heatproof plate that fits inside your steamer. Scatter half of the julienned ginger and the white parts of the spring onion over the fish. Steam over high heat for 8–10 minutes, or until the fish is just cooked through and flakes easily with a fork. Once done, remove the fish from the steamer and carefully discard any excess liquid that has pooled on the plate. If you prefer a cleaner presentation, you can also remove the steamed ginger and spring onion before pouring over the seasoning sauce. Top the fish with the remaining fresh ginger and the green parts of the spring onion. In a small pan, heat the neutral oil until it is shimmering and very hot. Carefully pour the hot oil over the fresh aromatics, allowing them to sizzle and release their fragrance. It costs less than $2.50 per serving, can be prepared from frozen, and you don’t need to visit a fish monger. It’s a version of the popular Chinese steamed sea bass that we all loved as a kid (except me), and it can be made in 20 minutes flat. 15 minutes if you already have the ginger and scallion prepared. I was honestly surprised to learn that most of us loved this dish as a kid, because I absolutely HATED it. He’s not usually a fan of fish unless it’s battered but this he would keep asking for more. Ingredients: - any white fish fillet (my favourite is grouper or black cod but I used red snapper here) - ginger sliced and julienned - spring onion sliced and Julienned - 2 tbsp oil (heated up) Sauce ingredients: - 2 tbsp soy sauce - 1 tbsp water - 1/2 tsp sugar - drizzle of sesame oil - dashes of white pepper Sprinkle some salt on the fish then Place the fish in the steamer once the water has started boiling then steam for 7-8mins. Drain the fish water and Top with julienned spring onion and ginger. Also, I know most people pour hot oil and scallions over the fish to season at the end, but our family has never done that. Is it just us? Maybe my grandma’s just trying to avoid extra oil, but regardless it’s one less pan to clean up at the end.
