petition to stop making nutrition & gut health weird and unnecessarily expensive in 2026 yes, I’m looking at you zoe with your daily 30+ simply stewing apples and pears is SUCH an easy, cheaper and tastier way to add in a habit that supports your gut health cooking the fruit: - releases the pectin from the cell walls - feeds your gut bacteria (e.g. a prebiotic) - increases production of compounds (SCFAs) that maintain gut health & reduce inflammation - makes them easier to digest (for my gals with sensitive guts) how I do it: - chop apples and pears into cubes (leave the skins on) - simmer gently with a splash of water, cinnamon and lemon juice - cook for 10-15 minutes until the fruit starts to collapse - enjoy hot or cold on porridge, yoghurt, toast, anything you like! - keeps for 3-5 days in the fridge I’ve shared the full stewed fruit recipe and the exact porridge I make (yes, the one I get asked about on a daily basis) over on my brand new shiny substack if you want it properly written out. Take your pick! - N x ❤️ Slow Cooked Beef Stroganoff STEW 1.75kg/ 3.5lb beef chuck or other stewing beef , cut in 4cm / 1.5” cube 1.5 tsp each salt & pepper 2 tbsp oil, 20g/1 tbsp butter, unsalted 1 large onion , halved then sliced into 1 cm/0.”4 slices 4 garlic cloves, minced 4 tbsp Dijon Mustard, 7 tbsp (60g) flour, 1L/4 cups beef stock/broth (low salt) 1.5 cups (300g) sour cream GARLIC BUTTER MUSHROOMS: 3tbsp/ 45g butter, 700g / 1.2lb mushrooms (sliced 0.5cm thick), 3 garlic cloves finely minced, 1/2 tsp salt and pepper SERVING: Pasta, wide egg noodles, mashed potato, chives for garnish PS If you have an instant pot (IP) or slow cooker with sauté function, do steps 1 to 3 in that. If not, do steps 1 - 3 on stove then pour all the liquid into a slow cooker. 1. Sprinkle beef with salt & pepper, heat 1 tbsp oil over high heat, sear beef in batches, adding more oil as needed. Remove from pot, let por cool slightly. 2. Melt butter, cook onion and garlic 3 min. Sprinkle flour across surface (don’t dump in one place), stir. Add mustard, stir (will look gluey, have faith). 3. While stirring, slowly pour half the stock in. Mix so the flour-mustard “paste” dissolves into the stock, as it heats up it will thicken quite quickly into a gravy. Once lump-free, stir in remaining stock/broth. 4. Add beef and simmer gently on low for 2 - 2 hr 15 min until beef is fall apart tender. OR slow cook 8 hours, pressure cook/IP HIGH 40 min. 5. Mushrooms: melt half butter, cook half mushrooms until almost golden. Add salt, pepper and garlic, cook until mushrooms golden. Remove, repeat with remaining mushrooms. 6. FINISHING: whisk 1.5 cups liquid in stew with sour cream*, pour into stew and stir GENTLY (so beef doesn’t fall apart!) Sstir in mushrooms. Simmer on stove 10 min (slow cooker 10 min, pressure cook 1 min, IP saute function 5 min), then serve over mash, noodles, pasta! *this step prevents white specks in sauce as you can’t mix vigorously to dissolve sour cream otherwise meat falls apart

This paired well with my Mukimo & steamed cabbage that the kids enjoyed over dinner with some meatballs. Always cook down your spices alongside the tomatoes and onions to develop depth of flavor and avoid tasting the raw spices in the final dish. Frying spices will give them a fresher, brighter taste & aroma or else your food will taste like the spices fresh of the container.
