Extraction Depends on Temperature Coffee brewing is all about **extraction** — pulling flavors from ground beans into water. * **Too hot (above ~96°C / 205°F)** → Over-extraction Bitter, harsh, dry finish. * **Too cool (below ~90°C / 195°F)** → Under-extraction Sour, weak, flat taste. The sweet spot? **90–96°C (195–205°F)** for most brew methods. ## ⚖️ 2. Balance of Flavors Coffee contains acids, sugars, oils, and bitter compounds. * Lower temps highlight **acidity**. * Higher temps extract more **bitterness and body**. * The right temp creates **balance, sweetness, and clarity**. This is especially important for methods like **Espresso**, where small changes dramatically affect taste. 🧪 3.
