Tinned Fish Talk 🎣 King Salmon Cheeks from @wildfishcannery King salmon cheeks are a cut you can’t get anywhere else in a can, it’s rare to even find at a fishmonger, much less a restaurant. Fish cheeks are rare because they are so small and labor-intensive to harvest. There’s only two per fish so you can imagine how much it takes to fill a single can. The good news: this is one of the most uniquely pleasurable experiences I’ve had from a tin of fish. The bad news: there is a very limited quantity that sells out almost immediately each year (sorry!) For transparency, they sent me this tin ($44) but know i’ve been a continued customer and all opinions are my own. I chose to warm up the unopened tin in hot water so the natural fat and collagen are even more luxurious—like a fatty, unctuous scallop. King salmon has a relatively mild flavor and richer texture compared to sockeye or coho. Wildfish Cannery is a one-of-a-kind operation here in North America with a tight-knit supply chain that hand-packs fish caught locally in Southeast Alaska. I hold a special respect for their culinary approach, the cannery is a direct opposition to the category’s commodity reputation.

Fresh cherry tomatoes and cucumber bring hydration and antioxidants, sauerkraut supports gut health (which always shows up on your skin), and a little parmesan just add an extra layer or salty deliciousness😋Quick and easy, but also really satisfying and perfect to be eaten on the sofa while watching SATC😉proof that glowing-skin meals don’t need to be complicated😁 Serves 1 Ingredients: 1 tin of sardines in olive oil 2 organic eggs 1/2 small/medium cucumber - cut into slices A handful of cherry tomatoes - sliced 1/2 avocado - sliced A forkful of sauerkraut or any pickles of your choice Few slices of parmesan cheese A generous drizzle of good quality extra virgin olive oil - I love @ioniangold Bring a small pot of water to a boil. Add in the eggs and cook for 7 minutes. Drain and rinse them under cold water for 1 minute. Peel off the shell and cut them in half. Add them to a large plate with all the other elements. Drizzle everything with some good quality extra virgin olive oil and a pinch of sea salt.

If the texture or lack of visual appeal is what keeps you from eating tinned oysters, try this! Ingredients: 2 tins oysters or mussels 4 tbsp butter 2 cloves garlic, minced 1 shallot, finely diced ½ tsp Red pepper flakes 1 cup very finely chopped parsley 3 tbsp heavy cream 2 tbsp parmesan Squeeze of lemon salt + black pepper to taste Crusty bread for serving Instructions: Strain oil from 2 tins of oysters and set aside. Do not discard. Chop oysters well then return to oil. Melt butter over medium heat. Add chopped shallots, garlic, and red pepper flakes. Sautee until fragrant, about 2 minutes. Add heavy cream and parsley and stir until well incorporated. Grate fresh parmesan to taste into the mixture. Remove from heat. Add oysters and their oil to the pan along with a squeeze of lemon and mix to incorporate. Transfer to serving dish with crusty bread. Top with additional parmesan and red pepper flakes to taste. Tinned Fish Toast with @ClevelandKitchen Fermenty Onions, Garlicky Mayo & Briney Muffaletta Recipe: Sprouted Bread Slices, Toasted (I’m using ezekiel bread here) Homemade garlic Mayo or seed oil free mayo Muffaletta (1 12 oz jar chopped giardiniera, ½ cup chopped Kalamata olives, ¾ cup chopped Castelvetrano olives) Sardines in spicy tomato sauce Cleveland Kitchen Fermented Red Onions For the Garlic Mayo: 2 egg yolks 1 Tbsp Vinegar or Lemon Juice 2 garlic cloves ½ cup avocado oil Sea salt to taste For the Garlic Mayo: Combine egg yoks, garlic, and vinegar using an immersion blender, then slowly stream in the oil to create an emulsion. Taste and adjust with sea salt. For the tinned fish toast: Toast a piece of bread and allow to cool slightly. Spread a generous amount of garlicky mayo, followed by a layer of muffaletta, some sardine fillets and a generous helping of fermented veg!
