roasted red pepper pasta sauce 🌶 a quick, easy, vegan sauce that has a fun lil secret ingredient…🫢 about a month ago, i realized you can add silken tofu to literally any sauce or soup to make it extra creamy & add protein (@avocado_skillet is the queen of this). you can find it at most grocery stores and it’s SO cheap! don’t worry, it doesn’t change the taste at all & it’s approved by kyle hehe. this is such a good little hack that i’ll be using non-stop RECIPE (vegan, high protein, gluten free option*) -1 lb pasta *sub gluten free -12 oz drained roasted red peppers (from a jar) -olive oil -1 onion, diced -3 cloves garlic, minced -1/2 cup full-fat coconut milk (or milk of choice) -1/2 block (1/2 lb) silken tofu -red pepper flakes to taste -salt + pepper to taste cook pasta according to package directions. drain and set aside. bring pot to medium heat and add a bit of oil. once hot, add onion & sauté for about 5 minutes or until tender. add garlic and cook 2 more minutes. transfer to a blender along with the remaining ingredients. blend until smooth. pour sauce back into the pot & add pasta. stir until coated & enjoy! #pastasauce #pastarecipe #roastedredpeppers #highproteinmeals #veganrecipes #healthycomfortfood #healthypasta #easyandhealthy #easydinner #easyhealthymeals
