🥦 Roasted Cauliflower Veggie Steak 🍂 A thick, spiced cauliflower steak served over a silky chickpea cream. Healthy, satisfying, and so delicious! 🌿🍯 📝 Ingredients: • 2 thick cauliflower slices • 1 tsp paprika • 1 tsp garlic powder • 1 tsp cumin • 1 tsp turmeric • 2 tbsp olive oil • 2 small knobs of butter Chickpea Cream: • 230g cooked chickpeas • 1 garlic clove • 1 large tbsp plain yogurt • 1 tbsp olive oil • Juice of 1/2 lemon • A handful of fresh parsley • A pinch of salt • 1/4 tsp cumin • 2-3 tbsp cold water ⏱ Steps: 1️⃣ Cut two thick “steaks” from the center of the cauliflower. Place them on a baking tray. 2️⃣ Mix the olive oil with all the spices. Brush both sides of the steaks generously. 3️⃣ Place a knob of butter on each steak. Bake at 200°C for 20-25 mins, then grill for 2-3 mins until golden and charred. 4️⃣ While roasting, blend all the chickpea cream ingredients until perfectly smooth. Adjust water for desired consistency. 5️⃣ Spread a generous layer of cream on a plate. Place the roasted steak on top. 6️⃣ Finish with a drizzle of olive oil, fresh parsley, and a pinch of paprika. Crispy Broccoli Waffles 🥦🧇 A delicious new way to enjoy broccoli. This recipe is based on my favorite smashed broccoli, but this time I tested it in a waffle maker and it works! Super easy, crispy, and so delicious. ⸻ Ingredients ⤵︎ Broccoli, boiled until tender Paprika, garlic powder, onion powder, salt, and pepper Shredded cheese (mozzarella or cheddar) ⸻ Instructions ⤵︎ Prep Broccoli → Boil broccoli until tender, drain well, and press out excess moisture. Season → Toss broccoli with paprika, garlic powder, onion powder, salt, and pepper. Cook Waffles → Preheat and lightly grease the waffle maker. Sprinkle cheese on the bottom, add the seasoned broccoli, then top with more cheese. Close and cook until golden and crispy, about 4–6 minutes. There is something about roasting vegetables that just transforms them completely 🔥🌶️ The aubergine turns soft and silky, the peppers become sweet and slightly charred and everything soaks up that rich, smoky flavour from the oven. It is the kind of dish you can serve warm or cold, as a side, or pile onto toasted bread for something a little extra. Ingredients: -1 aubergine (eggplant) -3 bell peppers (any colour) -1 garlic clove, minced -fresh parsley, chopped -3 tablespoons extra virgin olive oil -salt and pepper to taste -crumbled feta (optional) Instructions: 1. Preheat your oven to 220°C . 2. Wash the aubergines and peppers, leaving them whole. Prick the aubergines a few times with a fork or knife to prevent bursting. 3. Place the vegetables on a baking tray, drizzle some olive oil and add some salt. Roast for 35-45 minutes turning occasionally, until the skin is charred. 4. Remove from the oven and let them cool slightly. Peel off the skin of the aubergines and peppers (it should come off easily). Slice or tear into chunks. 5. In a bowl, mix garlic, parsley, olive oil and salt. 6. Toss the roasted vegetables with the dressing and sprinkle over salt and pepper and add feta if using. 🍅Zucchini Fritters Recipe🍅 Ingredients: • Zucchini (about 1 kg / 2.2 lb) •. 3 potatoes • 3 carrots •. 3 eggs • 1 cup all-purpose flour • ½ tea glass olive oil • 1 packet baking powder • 1 teaspoon salt • 1 tablespoon chili flakes • 1 teaspoon black pepper For the topping: • 1 pack sliced cheese • 6 cherry tomatoes Preparation: 1. Wash all the ingredients thoroughly. Grate them separately. 2. Sprinkle a little salt over the grated zucchini and let it sit for 2 minutes. 3. Squeeze out the excess water very well with your hands. 4. Place all the ingredients in a bowl and mix well. 5. Line a baking tray with parchment paper. Divide the mixture into 6 equal portions and shape them by hand on the tray. 6. Place one slice of kashar cheese on each portion and put one cherry tomato in the center. 7. Here’s how you can make it Recipe Ingredients 2 cups vegetables of choice (Onion, bell pepper, zucchini, mushroom, broccoli) Seasonings (Chilli flakes, Oregano, paprika, garlic powder) 1 tbsp olive oil Pizza sauce 1/4 cup 2-3 tbsp Parmesan 1/4 cup mozorella Toppings of choice ( basil leaves, onion, tomato, , sausages, salami, pepperoni) Method: 🍕 Preheat oven at 180 degrees, in a baking tray assemble the chopped vegetables , add olive oil and season it.
