1. If it’s not angus or Wagyu it’s not good. I’ve seen thousands of carcasses and eaten my fair share of meat. One of the best beeves I’ve ever eaten was a jersey cross that was older than the standard recommended slaughter age. 2. Young beef is tender beef. Not necessarily. Tenderness is determined by so many factors including genetics, diet, handling, and preparation. I’ve had incredibly tender young beef and young beef that is no more tender than old beef. 3. Grass fed beef is always good beef. Grass fed beef is very popular right now but it doesn’t mean it’s good. It certainly can be but grass fed beef has to be finished on the right forage just like grain finished beef has to be finished in the right feed. I’ve spoken with too many people who were disappointed with their grass fed beef because it wasn’t finished well. 4. Beef is bad for you. Beef is one of the most nutrient dense, bioavailable foods we can eat. And beef is not beef is not beef. There is a big difference in the nutritional profile of supermarket beef and pasture raised beef. 5. USDA means American beef. Accurate data isn’t readily available but a lot of the beef on grocery store shelves didn’t originate in the US and wasn’t even necessarily slaughtered here. 6. The US has the best beef and the best beef culture. There is a lot we can learn from practices from all over the world. I’ve had delicious beef both here and abroad. 7. Beef cattle are destroying the planet. This isn’t just wrong, it can be exactly the opposite. When raised in a way that is in accordance with nature, beef can help restore soil quality and ecosystems and is good for the planet.
