This time the journey takes us to Bosnia & Herzegovina 🇧🇦
Ćevapi with Lepinja and Ajvar
Ćevapi (Balkan grilled sausages)
Ingredients
• 500 g ground beef
• 500 g ground lamb
• 4 cloves garlic, minced 2 whole white onion
• 1tbs salt, 1 whole egg
• 1tbsp paprika
• ½ tsp black pepper
• ½ tsp baking soda
• 60 ml sparkling water
Method
1. In a bowl combine the ground beef and lamb.
2. Add garlic, salt, paprika, and black pepper.
3. Dissolve the baking soda in the sparkling water, then pour it into the meat mixture.
4. Mix thoroughly until the mixture becomes slightly sticky and well combined.
5. Cover and rest in the fridge for at least 1–2 hours (overnight is even better).
6. Shape into small sausage shapes about 6–8 cm long.
7. Grill on a hot grill or pan for 6–8 minutes, turning until nicely charred and cooked through.

Lepinja (Balkan Flatbread)
Ingredients
• 500 g flour
• 7 g instant yeast
• 1 tsp sugar
• 1 tsp salt
• 300 ml warm water
• 2 tbsp olive oil
Method
1. Mix yeast, sugar, and warm water and let sit for 5 minutes.
2. Add flour, salt, and olive oil.
3. Knead until a soft dough forms.
4. Cover and let rise 1 hour until doubled.
5. Divide into round balls and flatten slightly.
6. Rest another 20 minutes.
7. Bake in a very hot oven 250°C for 7–10 minutes until puffed and lightly golden.

Ajvar (Roasted Pepper Spread)
Ingredients
• 4 red bell / 2 point red peppers
• 1 eggplant
• 2 cloves garlic
• 2 tbsp olive oil
• 1 tsp vinegar
• Salt to taste
Method
1. Roast the peppers and eggplant at 220°C until charred and soft.
2. Peel off the skins and remove seeds from peppers.
3. Blend with garlic, olive oil, vinegar, and salt.
4. Cook the mixture in a pan for 10–15 minutes until slightly thick.
