JALOW SUGAR HIGH PROTEIN MATCHA BITES
These are such a good option if you want something sweet, but still want to keep sugar low and ingredients simple. They’re creamy, satisfying, and the matcha adds a subtle boost 🍵
Ingredients
1 1/2 cups shredded coconut
1 scoop protein powder
1 chilled can full fat coconut milk, thick part only
1 tsp matcha powder
1 tbsp softened coconut oil
1 to 2 tbsp maple syrup, optional depending on how sweet you like things
1 cup white chocolate chips
I used Enjoy Life white chocolate which is low in sugar and dairy free
Instructions
Chill the coconut milk overnight if possible. Scoop the thick coconut cream into a food processor.
Add shredded coconut, protein powder, matcha, coconut oil, and maple syrup if using.
Blend until sticky and well combined.
Press into a parchment lined pan or roll into bites and freeze for 30 to 45 minutes.
Melt the white chocolate, drizzle over top, then chill until set.
