An apple and blackberry pie to celebrate the pi day... Pi day to celebrate the iternal ratio of perimeter of a circle to its diameter = 3.14 and it is constant for any circle, which can be applied to a lot of complex geometrical 2D and 3D shapes........as well as for calculating how much pastry needed to line and cover a circular pie! (think about today’s date written in American format; 3.14..did you get it?) Even though pi has nothing to do with pie, any excuse to have a pie is justified. Hence this decorated apple and blackberry pie. For the filling, half the apples are stewed. Make sure, not much water is left. Then it is mixed with the rest of the apples and some blackberries.  For the pie crust, it is a pastry lattice, with pastry flowers and leaves for decoration. BRITISH PIE WEEK 🥧 X BRITISH CLASSICS 🇬🇧#Pies It’s British pie week and today we are doing a collab with my British classics series to visit the one and only @manzespieandmash 🤤 I went for the classic 2x Beef pies, 2x Mash and Liquor which came to around £9.60. I also ordered the eels which were around £5. These guys have been serving pies for over 100 years now using the same recipes! I love it, it feels like you’ve stepped into a Time Machine. The pies were banging, especially when they are salted up and hit with the classic chilli vinegar 🔥 The mash was so dance and heavy, and the liquor pulls it all together. The eels were not for me though. I just couldn’t get past the fact the bones it’s in and they taste of sandpaper 🤷‍♂️ each to their own I guess but this has confirmed I wouldn’t be much good in a Bush Tucker Trial 😂😂 📍 @manzespieandmash 🗺️ Peckham 🌟 If you can’t take a date, take a mate! It’s National Pie Week, so I had to make a proper British classic! 🥧🇬🇧 Who else loves a homemade pie?! Shortcrust pastry ingredients: (for 20cm wide tin) 400g plain flour 200g unsalted butter 1 tsp salt 6 tbsp cold water 1 egg yolk 1 egg (for egg wash) Ingredients: 4 boneless skinless chicken thighs 1 tbsp butter 1 tbsp olive oil 1 leek 3 cloves garlic 2 tsp dried thyme 1 tbsp plain flour 200ml chicken stock 100ml double cream 1 tsp Dijon mustard Salt Black pepper Method: 1. In a large bowl, rub the cold diced butter into the flour until it looks like fine breadcrumbs. Add salt and stir it in. 2. Add egg yolk and cold water a tablespoon at a time, mixing until the dough just comes together. 3. Shape into a disc, wrap in cling film, and refrigerate for 1 hour before using. 4. Heat butter and olive oil in a pan, cook the chicken until golden. Season with salt and black pepper. Remove and set aside. 5. In the same pan, soften the leeks and garlic over low heat. Add thyme, salt and black pepper. 6. Stir in flour, cook for 1 min, then gradually whisk in chicken stock. 7. Stir in double cream and mustard. Simmer 5 mins until thick. Add the cooked chicken, mix well, then let cool completely before filling the pie. 8. Roll out 2/3 of the pastry to 0.4cm thick and gently press it into the base and sides of your tin. Trim excess, leaving a slight overhang for sealing later. 9. Line with baking paper and fill the bottom with rice or baking beans. Bake at 200°C for 10 mins. 10. Remove rice and baking paper, brush base with egg wash, and bake 5 more mins. 11. Add cooled chicken and leek filling evenly. Roll out the remaining pastry, place on top, and crimp the edges together with a fork. Brush with egg wash and make 2 small cuts in the center for steam to escape. 12. Bake at 200°C for 30 mins or until golden brown and crisp all over. Rest 5-10 mins before removing from tin to help set. Enjoy! #nationalpieweek #britishfood #homemadepie #comfortfood
