It’s creamy, lightly sweet, made with just 5 ingredients, and naturally thickened with chia seeds for a boost of omega-3. Reasons to love it ✅ Perfect for meal prep ✅ Easily vegan (swap honey for maple syrup) ✅ Only 5 ingredients ✅ High in fibre & omega-3 ✅ Gluten-free Enjoy as is, or top with extra fruit, yoghurt, or a little crunch. Ingredients (Serves 4) 240 ml (1 cup) coconut milk, or any dairy-free milk 150 g (1 cup) frozen raspberries 70 g (scant ½ cup / about 7 tbsp) chia seeds 240 ml (1 cup) coconut yoghurt 20 ml (1 tbsp + 1 tsp / just over ⅛ cup) honey, or maple syrup Method ❶ Blend the coconut milk, honey, and ❷ raspberries until smooth.
❸ Pour into a container, add chia seeds and coconut yoghurt, and mix well.

Add the Greek yogurt, chia seeds, vanilla, and honey. Mix until smooth and evenly combined. Top with extra blueberries and a sprinkle of cacao nibs or dark chocolate. Blend the raspberries, milk, maple syrup and vanilla extract together 2. Pour into a bowl. Add the chia seeds and Greek yogurt and stir well 3. Stir once after 20 – 30 minutes so the chia seeds distributes evenly 4. Let set in the fridge for at least 6 hours or overnight 5. If after chilling it’s thicker than you want, you can always stir in 1 – 2 tablespoons milk 6. Pudding Ingredients ½ cup chia seeds ¾ cup plain Greek yogurt 1 cup milk of choice (coconut milk is preferred) 1¼ cups mango chunks (about 1 large ripe mango, fresh or frozen) ¼ cup unsweetened shredded coconut ½ cup coconut cream ((solid part from can)) 3 tablespoons maple syrup (can sub honey) 1 teaspoon vanilla extract Pinch of salt Toppings (optional) Greek yogurt dollop diced mango toasted coconut flakes honey drizzle lime zest In a blender, add the milk, mango, shredded coconut, maple syrup, vanilla, and a pinch of salt. Blend until completely smooth and bright. Add the coconut cream to the blender and blend again briefly, just until combined. In a medium bowl, add the Greek yogurt. Pour in the mango coconut mixture and whisk until fully smooth. Stir in the chia seeds. Let sit for 5 minutes, then stir again to prevent clumping.
