We’ve stayed in this Homestay called and bhaiya made this soup, simple and so flavourful. You need just 4-5 ingredients and that’s all. Let’s see the recipe. Ingredients 1 tsp oil or ghee 1/2 cinnamon stick 8-9 garlic cloves Handful of coriander stems, chopped Handful of coriander leaves, chopped 8-10 black peppercorns, freshly crushed Salt to taste 2 cups water Dash of lemon juice Method 1. In some oil, add cinnamon stick l, garlic and coriander stems, cook for a min 2. Now add water, black pepper powder, salt and coriander leaves and 2 cups water, let it simmer for 3-4 mins 3. Yours, Kevin 🇩🇪 Das brauchst du 4 große weiße Zwiebeln 3 Knoblauchzehen, fein gehackt 800 ml Gemüsebrühe 600 g Kartoffeln, 1-cm-Würfel 200 g Frischkäse (v) Etwas Öl Salz, Pfeffer 1 EL Thymian 1 EL Senf Petersilie, fein gehackt Chiliflocken Brot zum Dippen So machst du es 1. Slice the onions and caramelize them in some oil with a pinch of salt for 15–20 minutes. 2. Add garlic, thyme, pepper and mustard and briefly sauté. 3. Stir in the cream cheese until fully melted. 4. Pour in the vegetable broth and bring to a boil. 5. Add the potato cubes and simmer for 15 minutes until tender. 6. Season with salt and pepper. 7. Top with parsley and chili flakes. For 4-5 portions:
- 1 kg super ripe tomatoes
- 1/3 long cucumbe — Her majesty - second best cold soup in existence - gazpacho. Ridiculously refreshing! For 4-5 portions: - 1 kg super ripe tomatoes - 1/3 long cucumber - 1 green bell pepper - 1-2 slices of white bread, soaked in water for 20 mins - 70 ml good quality olive oil - 2 cloves garlic - Sherry vinegar to taste (I like lots!) - Salt to taste To serve: - 1 slice of green bell pepper, chopped into small cubes - 1 slice of cucumber, also chopped into cubes - 1/2 slice of bread to make croutons Roughly slice your tomatoes and throw them into a big bowl - no need to peel them but remove the white cores. Then add peeled & sliced cucumber and bell pepper with the seeds removed. Add the broken up soaked bread and crushed garlic. Blend everything with an immersion blender until smooth. Add the olive oil, vinegar and salt, blend again. Taste it - I like a lot of vinegar! Add more if needed, or more salt. Traditionally at this point you’d put the soup through a sieve so it’s thin & smooth. I like a more substantial soup though so I don’t do this, but feel free to improvise. Keep your gazpacho in the fridge for at least 4 hours or overnight. To serve, make croutons: break up 1/2 slice of bread into small chunks, then throw in an air fryer for 10 minutes at 170 Celsius. Chop up a slice of cucumber & a slice of pepper into small cubes, then top together with croutons. Will be my summer staple! Brilliant olive oil gifted by @itspedro_oliveoil x
