To kick off the I Don’t Like Leftovers Series, we are having seared chicken breast and broccolini over a lemon garlic cream sauce. It’s simple, only requires one pan, and is perfect when cooking for one! Ingredients (measure with your heart): • One piece of chicken breast seasoned with salt, pepper, Kinder’s Lemon Butter Garlic, and paprika. Seared in avocado oil for 4-5 min on each side. Adjust cook time based on thickness of chicken breast. • Handful of broccolini seared in butter and seasoned with salt, pepper, and garlic powder. Add water to steam. • Sauce: Salted butter, chopped yellow onions, garlic paste, basil paste, flour heavy cream, spinach. I follow a 3-month meal plan so I’m not impulse buying or scrambling for dinner ideas. Not using leftovers strategically One dinner should turn into multiple meals. Cooking with intention saves both money and time. Running to the store every time I think we need “one more thing” Those extra trips quietly wreck your budget. Planning ahead fixes that. I’ve spent weeks building this meal plan so you don’t have to. You literally flip to the next week, order your groceries, and you’re done in 5 minutes every week. My dad ordered this out all the time when I was younger. He loved the Pecan Crusted Chicken salad from Applebee's so I wanted to recreate it as a meal for two! This is a dinner salad, so it's meant to be a bigger salad. If you want a smaller salad, you can just reduce the measurements on the salad ingredients. Here's my pecan crusted chicken dinner salad for 2 recipe: 1 chicken breast, sliced in half Cooking spray Dredge: 1 egg 1 tbsp Greek yogurt 1 tbsp Dijon mustard 2-3 tbsp milk Coating 3/4 c pecans, chopped 1/2 c panko bread crumbs Salt Pepper Garlic powder Paprika Salad Base 1.5 heads of romaine, chopped 1/2 red onion, diced 1-2 stalks of celery, diced 1/2 c + craisins 1 can mandarin oranges ~2 oz crumbly blue cheese 1/3 c balsamic vinaigrette Slice chicken in half. In a dish combine all of the ingredients for the dredge and mix together thoroughly. Coat chicken and let sit in egg mixture. Set aside. Put pecans in food processor, chop until you have small pieces. You don't want it to be like a powder. If you don't have a food processor, you can use a cutting board and knife. In a separate dish, combine the chopped pecans, breadcrumbs, and seasonings and stir to combine. Prep a sheet pan by greasing it lightly or using parchment paper. Take each piece of chicken and take it from the egg mixture into the coating mixture, making sure to coat each side. Repeat for each piece of chicken. Once coated place on cookie sheet. Use remaining coating to fill in gaps on the chicken. Spray top of chicken with cooking spray. Put in air fryer at 400 for 10 minutes. Flip all of the chicken. Put it back in the air fryer for 30 minutes at 350 or until chicken is fully cooked. While chicken is cooking cut up all of your vegetables and assemble your salad. Slice chicken and serve on top of salad. #saladrecipe #salad #cookingforone #summerrecipes #dinner

I always make some extras for meal prep as well! 💪🏻 FULL RECIPE ⬇️ INGREDIENTS - @getgraza olive oil - 1 lb of @grassrootscoop lean ground beef (link + discount code in bio) - 2 large sweet potatoes - Seasonings: Salt, pepper, garlic powder, onion powder and smoked paprika. Toppings: - Shredded lettuce - Diced tomatoes - Diced red onion - Diced pickles - @primalkitchenfoods Special Sauce - Sesame seeds Note(s): Adjust ingredients to your liking. DIRECTIONS 1. Remove the skin and dice the sweet potatoes. Add to a large bowl, drizzle in some olive oil and season with the seasonings above. Mix till well combined then bake in the oven at 400°F for ~45-55 minutes or until soft on the inside and crispy on the outside. Flip half way through. 2. Prepare all of your toppings and set aside. 3. Add the ground beef to a large greased skillet over medium-high heat. Break it up then season it with the seasonings above. Let cook for 6-8 minutes. Here’s what I used - Coconut Milk (1 Can) - Red Curry Paste - Minced Garlic - Ginger Paste - Teriyaki Marinade/ sauce - Dumplings of Choice - Cilantro - Green Onions - Crunchy Chili Garlic - Sesame Oil Instructions 1. Preheat oven to 400°F. 2. In a 9x13 pan, whisk together the coconut milk, curry paste, garlic, ginger, teriyaki . 3. Place your vegetables of choice down. 4. Arrange the frozen dumplings on top in a single layer. 5. Bake at 400 for 35-40 minutes until the dumplings are cooked through. 7. One of the easiest comfort meals ever, it takes less than 15 minutes and most of the time you’re just waiting for the air fryer! Ingredients for Salmon Ochazuke 🍵🐟 • Salmon filet (I like freezing big Costco pieces) • Salt + pepper • Cooked rice • Green tea packet • Ochazuke packet (Any Japanese grocery store will have it!) • Green onions, chopped • Sesame seeds • Extra wasabi (optional but so good) • Kimchi or any sides (optional) Steps 1. Lightly salt and pepper the salmon and air fry at 400°F for about 8 minutes. 2. Prepare a bowl of hot rice and brew your green tea. 3. Place the cooked salmon over the rice and add the ochazuke packet. 4. Pour the hot tea over the bowl, then top with green onions, sesame seeds, and extra wasabi (I didn’t have any but this would make it better!!) 5.
