GEGluten free - Easiest Oven baked Gyros
You do NOT need a rotisserie to make proper gyros at home 🙌🏼

INGREDIENTS
1.2kg skinless chicken thighs
1/2 cup Greek yoghurt
2 tbsp extra virgin olive oil
Juice of one small lemon
1 heaped tbsp garlic
2 tsp paprika
2 tsp dried oregano
1.5 tsp salt
1 tsp cracked pepper
1 tsp cumin
(1/2 onion optional to skewer on the bottom)
METHOD
Marinate chicken by mixing all the ingredients listed in a bowl until well combined.
Add half a peeled onion to the bottom of the skewer.
Skewer the chicken, one piece at a time until firmly packed tower is formed in a crisscross way.
You can marinate overnight, but I didn’t have time so I just marinated for 1/2 hour in the fridge.
Before baking, add 1/3 cup of water to the base of the tray. This will allow you to baste the chicken occasionally while it cooks.
Bake at 180C fan forced for approx 1 hour and 15 minutes or until cooked through (it may need longer depending on your oven).
Remove from the oven, use a sharp knife to shave the chicken into thin pieces.
Serve in a toasted gluten free souvlaki wrap or with salad, whatever you like!
