Amonyak buharı elma kabuğundaki pigmentleri iyonlaştırarak koyu mor–siyaha dönüştürüyor.

Amonyak buharı tahriş edicidir. Deneyi açık havada veya iyi havalandırılan bir ortamda, eldiven, gözlük ve maske ile yapın. Öğrencilere yapılması uygun değildir, video gösterimi olarak izletilebilir.
In this experiment, I placed a red apple into a sealed container with ammonia solution. Within a short time, the apple turned dark purple–black. This is not rotting; it is a chemical color shift cauesed by the reaction of ammonia vapor with phenolic and anthocyanin pigments in the apple’s skin.
