INI used to be intimidated by homemade pasta.
I thought it required special equipment, complicated ratios, and hours of work.
Then I took a pasta-making class while traveling in Rome, and realized how simple it actually is.
Since then, I make fresh pasta at home all the time.
For one serving:
½ cup flour | 60g ( I used @kingarthurbaking 00 flour )
1 egg
Pinch of salt
That’s it. Multiply by however many people you’re feeding.
Ideally, use “00” flour, it gives you a smoother, more delicate, authentically Italian texture.
But regular all-purpose flour works perfectly fine too.
Homemade pasta isn’t complicated. It’s just misunderstood.
Save this for the next time you’re tempted to buy a box.
