Delicious Cheese Khachapuri Recipe :
Dough (for 3-4 pieces)
Ingredients :
Flour - 500 to 600 gms
Warm Water - 250 ml
Warm Milk - 250 ml ( or replace milk with water - 500 ml liquid total)
Dry Yeast - 7 gms
Sugar - 1 tbsp
Salt - 1 tsp
Vegetable oil - 2 to 3 tbsp
Dough Preparation :
1. Mix water with milk (temperature 35-40 degree C ), add sugar and yeast. Let sit for 5- 10 mins until foamy.
2. Sift flour , add salt.
3. Pour in the yeast mixture and oil, knead into a soft, elastic dough ( 8-10 mins).
Place in a bowl, cover and let rise for 1- 1.5 hrs in a warm place ( dough will double in size ). Punch down .
Assembly and Baking in Air Fryer or Oven :
1. Divide the dough into 3-4 parts, roll each into an oval.
2. Place a mound of cheese filling in the center.
3. Pinch the long edges of the flatbread towards the center ( if it doesn't stick well, lightly sprinkle with water) to prevent cheese leakage.
4. Flip seam - side down, make a lengthwise cut along the center.
Stretch the edges outward, shaping into a "boat". Gently press the sides down. Add more cheese to the edges if needed .
5. Gently press the cheese center and put one egg yolk.
6. Brush the sides with beaten egg.
7. Preheat the Air Fryer for 5 mins at 190 degrees then Airfry it at 180 degrees for 8-10 mins.
Or,
Bake at 220-250 degree C for 10 - 15 mins - until golden sides and dully melted cheese.
