JALOW SUGAR HIGH PROTEIN PEANUT BUTTER CUPS
These peanut butter cookie dough cups are the perfect low sugar, high protein snack when you want something sweet without the crash. They’re refined sugar free, chocolatey, creamy and perfect to keep in the fridge for easy snacks. 🥹
Ingredients
1/2 cup peanut butter
1/4 cup vanilla protein powder
2 to 3 tbsp maple syrup if you want, but I just replaced this with coconut oil instead to make it lower sugar
1/4 cup dark chocolate chips
Chocolate topping
1/2 cup dark chocolate chips or melts
1 tsp coconut oil
Instructions
In a bowl, mix peanut butter, protein powder and honey until smooth. Fold in the dark chocolate chips.
Divide the mixture evenly between 6 muffin liners in a muffin pan and gently press down.
In a separate bowl, melt chocolate chips with coconut oil in the microwave, stirring every 15 seconds until smooth.
Pour melted chocolate over each cup to cover the tops. Freeze for about 30 minutes until set, then store in the fridge.
Low sugar, refined sugar free, high protein and perfect for meal prep snacks or a healthier dessert.
