Caramelized Onion Holiday Dip: • 3 cups sweet onions (caramelized with ⅓ cup brown sugar or use raw onion if you prefer) • 2 cups grated Swiss cheese • 1 cup mayo • Garlic powder, salt, pepper to taste • Bake 350 for 25 mins Mix everything together, bake until hot and bubbly, and serve warm. Recipe below: What You’ll Need: - 1 lb (1 box) elbow macaroni — cooked al dente - ½ stick unsalted butter - 1 tbsp all-purpose flour - 1 pint heavy whipping cream - 1 (12 oz) can evaporated milk - 1 block (8 oz) @tillamook kosher medium cheddar - 1 block (0.55 lb) @traderjoes gouda cheese - 1 block (0.92 lb) @traderjoes Wisconsin extra sharp cheddar - ½ tsp each: paprika, onion powder, black pepper - No salt! The cheese adds plenty of flavor. Directions: 1. Boil the Pasta: Cook 1 lb elbow noodles until al dente (a little firm). Drain and set aside. 2. Shred the Cheese: Grate all three blocks of cheese. Divide in half — one half for the sauce, one half for layering when baking. 3. Make the Roux: In a large pot on low heat, melt ½ stick butter. Add 1 tbsp flour and whisk until smooth and slightly golden. Add a bit more flour or butter if needed to balance the texture. 4. Create the Cheese Sauce: Slowly pour in 1 pint of heavy whipping cream, whisking constantly. Then add the 12 oz evaporated milk. Let it gently thicken, stirring often. 5. Season: Add ½ tsp each of paprika, onion powder, and black pepper (you can adjust to taste — but skip the salt). 6. Melt in the Cheese: Slowly add and stir in half of your shredded cheese blend until creamy and smooth. 7. Combine with Pasta: Add cooked macaroni directly into the cheese sauce and mix until every noodle is coated. 8. Layer and Bake: Pour half the cheesy pasta into a baking dish. Add a layer of the remaining shredded cheese. Pour in the rest of the pasta, and finish with the rest of the cheese on top. Sprinkle lightly with paprika for color. 9. Recipe: 16 oz large elbow noodles 2 cups cashews 1.5 tsp onion powder 1.5 tsp garlic powder 1.5 tsp smoked paprika 1.5 tsp salt 1 Tbs Dijon mustard 1/4 tsp cayenne Juice from 1 (large) lemon 7 oz piquante/pimiento peppers 1/2 cup nutritional yeast Chives, for garnish Topping: 1/2 cup panko breadcrumbs 1/2 cup corn flakes, lightly crushed 1/2 tsp garlic powder 1/2 tsp smoked paprika 1/4 tsp salt 1/4 tsp onion powder 2 Tbs melted vegan butter 1. In a large pot, cook elbow noodles according to package instructions. 2. In a small sauce pan or pot, boil cashews for about 10 minutes. Once done, drain and rinse under cold water (most blenders cannot handle super hot substances) 3. In a high powered blender or blender cups, add 1 cup water, onion powder, garlic powder, smoked paprika, cayenne, salt, lemon juice, peppers, nutritional yeast, dijon, and cashews Blend until smooth. It may take 1-2 cycles and you may need to add another 1/2 cup more water to get it to very smooth (depends on how long you boiled your cashews and your blender) 4. Add to cooked noodles in a 9x13 baking dish and mix to fully coat. 5. Mix together all breadcrumb ingredients and top mac. Bake at 400 for 15-20 minutes or until breadcrumbs are toasty and brown. 6.
