This was one of the first recipes I ever shared back in 2010, and I’ve made it hundreds of times since. My kids now make it on their own. It’s soft, moist, perfectly chocolatey, and that homemade frosting? Unreal.
Here’s why it works: hot coffee (not water) boosts the chocolate flavor. Buttermilk makes it extra tender. The batter is thin, which freaks people out, but trust the process.
Pro tip: Freeze the cake layers, then frost them straight from the freezer. SO much easier.

Ingredients:
2 cups sugar
1¾ cups + 2 Tbsp flour
¾ cup cocoa powder
1½ tsp baking powder
1½ tsp baking soda
1 tsp salt
2 eggs
1 cup buttermilk
½ cup oil
2 tsp vanilla
1 cup hot coffee (or boiling water)
Frosting:
½ cup melted butter
⅔ cup cocoa powder
3 cups powdered sugar
⅓ cup milk
1 tsp vanilla
Mix dry ingredients. Add eggs, buttermilk, oil, vanilla. Stir in hot coffee. Bake at 350°F for 30-35 minutes in two 8-inch pans. Make frosting, assemble, frost.
