BACrunchy Sesame Carrot Salad
Fresh, crisp carrots tossed in a light sesame-honey dressing with ginger, garlic, and scallions. Simple, healthy, and full of flavor — perfect as a side or quick salad.

Ingredients
• 3–4 large carrots, cut into matchsticks
• 2–3 scallions, thinly sliced
• 2 tbsp cilantro, chopped
• 2 tbsp sesame oil
• 1 tbsp honey
• 1 tbsp lemon juice
• 1 tsp grated ginger
• 1 clove garlic, grated
• 2 tsp toasted sesame seeds
• 1–2 tsp chili crisp (optional)
• Kosher salt, to taste
Instructions
1. Toss carrots with a pinch of salt. Let sit 5–10 minutes, then drain excess liquid.
2. In a bowl, mix sesame oil, honey, lemon juice, ginger, garlic, sesame seeds, and chili crisp.
3. Add carrots, scallions, and cilantro. Toss well.
4. Taste, adjust salt, and serve.
