Cauliflower Rice with Chicken Breast
Ingredients:
1/2 head of cauliflower
1/2 red onion
1 leek
2 cloves of garlic
1 red bell pepper
1 cup of fresh peas
2 eggs
2 chicken breasts
Coriander for garnish
Preparation:
Finely chop the raw cauliflower in a blender.
Chop the onions and leek, then sauté briefly in a pan. Add garlic and dried chili pepper, sauté for 1-2 minutes, then add finely chopped bell pepper and fresh peas. Finally, beat 2 eggs and quickly mix them into the mixture in the pan, then fry briefly. Mix the spices: sweet paprika, ground coriander, salt, and pepper. Coat the chicken breasts with this spice mixture and fry each side for 2-3 minutes until they achieve a beautiful color, depending on thickness. Be careful not to overcook, so the meat remains juicy. You can always check the chicken with a thermometer; once it reaches 64 degrees Celsius, it’s ready.
