CADETOX SOUP? Well yes and no. It’s a beautiful delicious miso lemony soup that’s done in one pot and helps when I’m feeling ill, but it is not the ULTIMATE ELIXIR of detoxing.
However, I go to this soup when I need a lift, if I’m feeling under the weather or if I want to feel proper healthy, which if you do too, then may I recommend a cookbook OUT NOW by me called Proper Healthy? Yeah? Get it? Got it? Have a party? Yeah? Baba ghanoush.
Btw this recipe isn’t in the book, but the Immunity Soup with Crispy Tofu (pg 154) is VERY SIMILAR. Otherwise, do this for free.
ingredients:
- 3 spring onions
- 1 big knob of ginger
- 200g oyster mushrooms
- 1/2 jar butter beans (hello @boldbeanco)
- 70g frozen peas
- 70g frozen edamame
- 700ml reduced veggie stock (1 stock cube)
- 1 heaped tsp white miso paste
- 1 lemon’s zest (plus some juice to serve on top of the soup)
- 1 handful baby spinach
- 200g cooked rice/quinoa
- Fresh coriander to serve
- Also some chilli flakes if you fancy it.
