KESmoked Oxtails 🔥. These have gotten so expensive the past couple years but definitely a treat to eat. Reminds me of brisket and beef cheeks together. Basically smoking similar to a brisket. Smoke and braise.
Seasoned all sides heavy with @meatchurch Holy Gospel while adding some 16 mesh pepper to help with the bark. Fired up my @traegergrills Woodridge Pro at 225° and set on super smoke. I stuck a @meatermade Pro Probe in one of them to track them to probe tenderness. They smoked for 6 hours when the probe said 177° internal. Went into the wrap with 2 cups of beef broth, 1 can of @805beer and a half jar of @bearandburtons Beef Tallow. Covered tight and they went another 3 hours at 300°. Rested them for an hour and proceeded to separate the meat from the bones. Eat them as is or use the meat for tacos, nachos or anything really. Such a delicious bite!
