Vegan Oatmeal Banana Cashew Butter Breakfast Cookies😍🍪 Ooey and gooey fresh out the oven and super delicious when chilled too! Perfect paired with a cup of coffee in the morning. makes 8-10 cookies Ingredients: 2 spotty bananas 4 tbs cashew butter (feel free to sub for almond or peanut butter if needed) 1 c rolled oats 1/2 c semi-sweet chocolate chips 1 tsp cinnamon Directions: Preheat oven to 400F. Mash the bananas, add cashew butter and cinnamon and mix well. Mix in the oats to the batter and stir well. Stir in chocolate chips. Roll the cookies into balls with (I used a tablespoon to scoop) and place on a baking sheet sprayed with coconut oil. Bake for 18-20 minutes. *notes!!!! You can bake these cookies at 350 for 20-22 minutes and the texture will be soft on the outside as well as on the inside.
