VIPOV: it’s meal prep time 👌
Simple meals but they do the trick :)
The Deets:
Rice:
-Jasmine rice with coconut oil + salt
Beef:
- Onion and red pepper fried in olive oil
- Ground beef fried - excess fat drained
- Added: salt, garlic powder
Chicken in instant pot
- 3 packages of chicken,
- 2 packages of fajita mix
- 3-4 cups water (until chicken is submerged)
- Pressure cook for 10 minutes
- Then let sit for as long as you want to make it more tender
*I suggest at least 2 hours
*when shredding the chicken keep some of the liquid in the pot still
My meals (rectangle containers) - Lunch & dinner
1. Ground beef + rice - I add soya sauce and honey before eating
2. Shredded chicken, rice & broccoli - I will typically fry this meal up at night before eating with some olive oil and add soya sauce.
