Because this is a labor of love. 🤎🔥 For Black History Month, I’m bringing back Burnt Sugar Cake, a historic Black Southern celebration cake that slowly faded when box mixes took over. Burnt Sugar Cake Burnt Sugar Syrup • 1 cup granulated sugar (200 g) • 1 cup boiling water (240 ml) Melt sugar over medium heat until deep amber (do not stir, swirl pan). Carefully add boiling water, stir smooth, simmer 3–5 min. Cool. Reserve ½ cup for cake + ½ cup for frosting. Cake • 1 cup butter, softened (227 g) • 2 cups sugar (400 g) • 4 eggs • 3 cups cake flour (360 g) • 1 tbsp baking powder (14 g) • ½ tsp salt • 1 cup whole milk (240 ml) • ½ cup burnt sugar syrup • 2 tsp vanilla Heat oven to 350°F / 175°C. Grease three 8-inch pans. Cream butter + sugar 3–5 min. Add eggs one at a time. Whisk dry ingredients. Alternate dry ingredients + milk into batter. Mix in burnt sugar syrup + vanilla. Bake 25–30 min. Cool completely. Traditional Burnt Sugar Frosting (work fast!) • ½ cup butter (113 g) • 1 cup brown sugar (200 g) • ½ cup burnt sugar syrup • ¼ cup evaporated milk (60 ml) • 3–4 cups powdered sugar (360–480 g) • pinch salt + 1 tsp vanilla Boil butter, brown sugar, syrup & milk 2 minutes. Cool until warm, then beat in powdered sugar, salt & vanilla. Frost cake quickly before it sets. Optional Brown Sugar Penuche Frosting (creamier outside) • 1½ cups butter, divided (340 g) • 1½ cups brown sugar (300 g) • ½ cup heavy cream (120 ml) • 1 tsp salt • 4½ cups powdered sugar (540 g) Melt ¾ cup butter. Boil brown sugar + cream + salt. Beat into melted butter with powdered sugar. Add remaining butter 1 tbsp at a time. Rest 10–30 min until spreadable. Assemble Fill and frost cake with traditional burnt sugar frosting. Optional: cover outside with penuche frosting. Southern Little Layer Cake with Old-Fashioned Chocolate Fudge Icing Here is the tutorial video for my little layer chocolate cake! This is one of those cakes that looks complicated, but it’s really just a series of simple steps stacked together. I wanted to film a full tutorial so you could see exactly how I make each layer, spread the icing, and bring it all together. Take your time, don’t rush, and have fun! Recipe below👇🏻 Vanilla Cake Layers Ingredients • 2 cups (4 sticks / 454g) unsalted butter, very soft • 3 cups (600g) granulated sugar • 10 large eggs, room temperature • 1 Tbsp vanilla extract • 5 cups (580g) cake flour • 1 Tbsp baking powder • ½ tsp kosher salt • 2 cups (480ml) whole milk, room temperature Cake Instructions 1. Preheat oven to 350°F (175°C). Grease three 8-inch round cake pans. You will bake in batches. 2. Cream butter & sugar Beat butter and sugar until very light and fluffy, 3–5 minutes. 3. Add eggs Add eggs one at a time, beating well after each. Mix in vanilla. 4. Combine dry ingredients Whisk cake flour, baking powder, and salt in a separate bowl. 5. Alternate flour and milk Add dry ingredients and milk alternately, beginning and ending with dry. Mix just until combined. 6. Portion batter Scoop ¾ cup (180g) batter per pan (very thin layers). Spread evenly with a spoon or offset spatula. 7. Bake Bake 10 minutes per layer, until just set, lightly golden, and springy. 8. Cool Cool a few minutes, then turn out onto parchment or racks. Let layers cool completely before icing. Here’s another classic Southern cake recipe from my childhood! A pig pickin cake was a staple dessert at gatherings such a pig pickins’, family reunions or church picnics. It’s an easy cake to make and must be stored in the refrigerator. Let me know in the comments if you have had this cake before so I can find my country folk tribe ❤️ Below is the full recipe 👇🏾 Ingredients Needed for Pig Pickin‘ Cake 1 box of yellow cake mix 4 eggs 1 cup of sour cream 1 teaspoon of vanilla extract 1/2 cup of oil 1/2 cup of milk 1/2 cup of pecan chips, optional 14 oz can of mandarin oranges, drained Directions to Make Pig Pickin’ Cake Mix cake mix, eggs, sour cream, vanilla, oil and milk in a standing mixer for 2-3 minutes on medium speed until completely combined. Add drained oranges and pecans and beat on high until the oranges are broken up. Pour into greased cake pans and bake on 350 degrees for 25-28 mins. Stick a toothpick in the center of the cake and once it comes out clean then the cake is done. Allow cake to stay in pans for 15 minutes and then turn out onto a cake rack to cool completely. *If you are using 8 inch cake pans, the batter will fit into three. If you are using a 9 inch, the batter will only fit two. **Double the recipe if you want three full cake layers** Ingredients Needed for the Frosting 1 (4-1/2 serving size) package of instant vanilla pudding 1 (20 oz) can crushed pineapple, drained well 1 (16 oz) carton of @coolwhip A few mandarin oranges for garnish (you will need to buy two cans if you wish to garnish) Directions to Make Frosting Mix together crushed pineapple and instant vanilla pudding mix. Fold in cool whip. Spread pineapple mixture evenly between layers and on top of cake. Chill cake 3 to 4 hours. Garnish, if desired. Square pan available at oldcountrykitchenware.com⁠ Mile High Condensed Milk Pound Cake ⁠ 1 pound (4 sticks) unsalted butter, room temperature⁠ 3 cups granulated sugar⁠ 1 can (14 oz) sweetened condensed milk⁠ 8 large eggs, room temperature⁠ 1 tbsp vanilla extract⁠ 1 teaspoon salt⁠ 4 1/2 cups cake flour or White Lily All Purpose Flour⁠ ⁠ Preheat oven to 300°F. Prepare Old Country Kitchenware square tube pan by fitting a parchment paper square between the two pieces and brushing with pan coat. Beat butter and sugar in the bowl of a stand mixer until pale, light and fluffy (about 6 minutes at medium speed). Add extract, salt, and 1/2 cup flour, beat until combined. Add sweetened condensed milk and beat until combined. Add 1 egg and beat in until it is fully incorporated. Repeat with each egg, beating well after each addition. Add the remaining 4 cups of flour in two additions. Scrape the bottom and sides of the bowl and beat for another 15 seconds. Pour batter into prepared tube pan and gently shake to settle the batter. Place on middle rack of oven with a baking sheet on the rack below it to catch any drips. Bake 2 1/2 to 2 3/4 hours or until a skewer inserted into the cake comes out clean. Let the cake cool until the pan is cool enough to handle. To unmold, place it over a metal can and push down to remove the outer piece. Once the tube is cool enough to touch for 4 seconds, lift or turn the cake out onto a wire rack to cool completely.

Orange Cream Cake (Heritage Black Southern Version) with custard layer + orange glaze Cake 2 ½ cups all-purpose flour (310 g) 2 tsp baking powder ½ tsp baking soda ½ tsp salt 1 cup unsalted butter, softened (227 g) 1 ½ cups granulated sugar (300 g) 4 large eggs, room temperature 1 tsp vanilla extract (5 ml) Zest of 2 oranges 1 cup buttermilk (240 ml) ¼ cup fresh orange juice (60 ml) Orange Custard Layer 2 cups whole milk (480 ml) ½ cup granulated sugar (100 g) 4 egg yolks 3 tbsp cornstarch (24 g) 2 tbsp butter (28 g) 1 tsp vanilla 2 tbsp fresh orange juice (30 ml) Zest of 1 orange Orange Glaze 1 cup powdered sugar (120 g) 2–3 tbsp orange juice (30–45 ml) Zest of ½ orange + pinch salt Instructions Bake cake: 350°F / 175°C. Assemble: Layer cake → spread custard → add top layer. Glaze: Whisk powdered sugar + juice + zest + salt. Drizzle and let drip.
