Pollo guisado 😍 Dominican style 🇩🇴🍗 One of those meals every Dominican household grows up eating. It’s simple, comforting, and packed with flavor. This stew chicken comes out so tender and the sauce is incredible. Here’s how I made it: Ingredients • Chicken pieces (bone-in works best) • Sofrito • Garlic • Dominican oregano • Salt • Red onion • Cubanelle pepper • Red bell pepper • Fresh cilantro • Olives • Soy sauce • Oil • Sugar • Tomato paste Instructions 1. Clean the chicken with lime, vinegar, and water, then pat it dry. 2. Season with sofrito, garlic, oregano, salt, peppers, soy sauce, and olives. Let it marinate for a few hours or overnight if you have time. 3. Heat oil in a pot and add a little sugar, letting it caramelize. 4. Add the chicken (without the marinade) and brown both sides for about 4–5 minutes per side. 5. Add some water to the bowl with the marinade and pour it into the pot. Stir in fresh onions and tomato paste. 6. Cover and cook for 20–25 minutes, or until the chicken is tender and the sauce comes together. I served mine with rice and peas, a simple side salad, and fried plantains. #PolloGuisado #DominicanFood #ComidaDominicana #StewChicken #dominicanrepublic

Stew Chicken 5-6 lbs whole chicken, chopped into smaller pieces, washed, drained well 1” ginger 6 garlic cloves 2-3 wiri wiri peppers 1 onion, roughly chopped 1 tsp dried thyme 1 tbsp cassareep (optional) 1/4 tsp ground cloves 2 tbsp brown sugar 8 oz tomato sauce hot water Handful cilantro or bhandhania, minced In a blender, purée ginger, garlic, hot peppers, and onion. In a large bowl, combine chicken, puréed seasoning, thyme, cassareep, cloves, and salt & pepper. Set aside or marinate overnight. Heat a large skillet or Dutch oven over medium high heat. Add 2 tbsp olive oil and brown sugar. When sugar bubbles up, add chicken and turn heat down to medium. Sauté 20 minutes until chicken releases liquid and the liquid reduces. Add tomato sauce, and hot water. Simmer until gravy thickens to your preferred consistency, about 20 minutes. Sprinkle with bandhania. Stir. Jamaican Style Stew Chicken Recipe🇯🇲🍗🔥 SAVE & share if you’d try this one ❤️ ✨ Ingredients (Stew Chicken): • 1 whole chicken (cut up, skin removed) • Lime (to clean) • 2 tbsp all-purpose seasoning • 1 tsp pimento • 1 tsp garlic granules • 1 tsp onion granules • 1 small onion (chopped) • Mixed peppers (chopped) • 1 tbsp browning • 2 tbsp green seasoning • 1–2 sprigs thyme • 1 whole scotch bonnet (burst near end 🌶️) • Chicken stock (as needed) • Hot water • Optional: carrot & potato 🔥 Method: 1️⃣ Clean chicken with lime, rinse and pat dry. Remove skin. 2️⃣ Season with all-purpose, pimento, garlic granules, onion granules, chopped onion & peppers, browning and green seasoning. Marinate (overnight if you can). 3️⃣ Heat oil in a pot and brown chicken until it gets a nice colour. Scrape off onions & peppers first so they don’t burn. 4️⃣ Once coloured, add back the onions & peppers from the seasoning bowl. 5️⃣ Add hot water to the seasoning bowl to clean it out, pour into the pot, then add a little stock and the chicken back in. 6️⃣ Cover and let it cook down low & slow. Add thyme and whole scotch bonnet (burst near the end). 7️⃣ When tender and falling off the bone, thicken slightly with a cornflour slurry. 8️⃣ Add carrots & potatoes near the end if using. A toast to blessings. Gratitude is a must! Grateful for love, family and friends. And even though I forgot to take photos of the good food, you better believe Chef Yvette showed up in that kitchen. I even had the meat eaters raving about my vegan options. Okay, my sister @marva.noel made the greens sing and my girl @antiguamarie brought the Caribbean taste with her stew chicken. This is when I go should I? I didn’t but everyone raved. Thank you @allansbakery for the best currant rolls, ever. And @hibiscusbrew for the sorrel. Back to the treadmill and my tennis racket now.
