Ingredientes:
1 taza agua
2-3 palitos de canela
1-2 anís estrellado
5-6 clavitos
(Opcional) Malagueta, nuez moscada
2 latas leche de coco
(Opcional) 1/2 lata crema de coco
1/3 taza azúcar blanca (Si no vas a usar crema de coco, añade más azúcar, ajusta a tu gusto)
1/2 taza fécula de maíz (maizena)
1 cdta vainilla
Pizca de sal
Canela en polvo
Instrucciones:
1. En una olla, pon a hervir el agua con las especias
2. En lo que hierve, en otra olla, sin prender la estufa, agrega la leche de coco (no la eches toda, reserva un poco), crema de coco, azúcar, vainilla y sal, y mézclalo todo
3. En un bowl, añade la fécula de maíz y la leche de coco que reservaste, y bátelo hasta que quede todo incorporado
4. Luego, añade la mezcla de fécula de maíz a la olla con el resto de los ingredientes e incorpóralos todos
5. Prende la estufa a fuego medio-bajo y cuela el té de especia
6. Menea la mezcla constantemente hasta que forme una consistencia espesa
7. Vierte la mezcla en el recipiente de tu preferencia y colócalos en la nevera por varias horas, hasta que se solidifique

LACORN-CARDAMOM TEMBLEQUE (🇵🇷A Twist on Puerto Rican Coconut Pudding 🥥 ) Recipe Below ⬇️
Tembleque is a staple in Puerto Rico (and throughout the diaspora) during the summer- with each pudding shaking as much as the girlies do at Papi Juice 🫣
Every summer was one where mt brother and I begged my mom to stop the car so we could get tembleque from the street vendor (which wasn’t difficult because she’s a tembleque fanatic herself)
This pudding has a coconut milk base that welcomes new flavors with open arms, like the earthy grounding ones of corn and cardamom
Here’s how to make my version of my fav PR treat:
-2 (15oz) cans FULL FAT coconut milk
-2 ears of corn, shucked
-2/3c sugar
-1/4 tsp salt
-3 to 4 tbsp cornstarch
-4 cardamom pods
1. Blend 1 can coconut milk with the kernels of 2 pieces of shucked corn until smooth. Save the cobs
2. To a pot, pour the corn-coconut mixture and add the corn cobs (sliced in half) & cardamom pods. Steep for 30 mins over low heat, stirring frequently.
3. Remove corn cobs. Strain mixture and put back into the pot. Stir in another can coconut milk, sugar, salt, and cornstarch. Stir over medium low heat until thickend
4. Pour into molds and chill overnight
5. Garnish with cinnamon and dive in!

📝Tembleque Recipe ⬇️
Ingredients-
🫖 Spice tea (use quantities reflective of your preference):
-5 cinnamon sticks
-5 Anise Stars
-Fresh ginger (two “thumbs”size and rough chopped)
-12 cloves
-3.5 c of water
📋Other ingredients:
-6 (13.5 oz) cans of coconut milk or 10 cups of coconut milk if you aren’t buying canned
-1 can each of condensed, evaporated and cream of coconut
-3/4 cup of sugar
-Pinch of salt
-Lime peel
-2 cups of Maizena (corn starch)
