As one of the country’s leading nutritionists, Federica Amati has played a key role in educating us about the dangers of ultra-processed foods.⁠ ⁠ But as more of us fret about UPFs, she has a new concern. “My biggest bugbear is the fear and panic that this narrative has caused,” she says. So now she has a plan to help shoppers navigate supermarket aisles jammed with UPFs without succumbing to dread over what they are feeding their families.⁠ ⁠ The phrase “ultra-processed food” was coined in 2009 by Carlos Monteiro, a Brazilian professor of nutrition. But there has been an explosion in awareness of the dangers of UPFs thanks to the likes of Chris van Tulleken, the professor of infection and global health at UCL and author of Ultra-Processed People, and Tim Spector, professor of genetic epidemiology at King’s College London and co-founder of Zoe, the health science company.⁠ ⁠ 🔗 Click the link in bio to read more

This is how a “food” is made when profit matters more than your health. What you’re watching starts with low-grade trimmings, fat, skin, blood, organs, and mechanically processed scraps. These are blended together with preservatives, refined salt, corn syrup, and dextrose to create something uniform, shelf-stable, and cheap. When sugars like corn syrup and dextrose are cooked with protein, they form AGEs, or advanced glycation end products. These damaged proteins create sticky reactions in the body that are connected to a wide range of health problems. This isn’t about taste. It’s about what happens after you eat it. If you’re going to consume animal protein, quality matters. Grass-fed, grass-finished red meat is more bioavailable and contains a higher concentration of amino acids than factory-processed options. It also provides zinc, magnesium, B vitamins, vitamin K, omega-3s, and unique compounds like carnitine, creatine, carnosine, and CoQ10. Quality matters. Choose whole, unprocessed animal protein. The third installment in my healthy swaps series is all about cereal! Often with cereals, the ingredients list is not too bad but there is a high sugar content.  By looking on the pack we can find options with slightly less sugar and more fibre And again, Weetabix, while still technically ultra processed, is actually low in sugar and high in fibre so another good option as a base for a healthy breakfast. Remember, the most important thing with cereals is that they shouldn't be the only food that you're eating for breakfast.  They should be combined with yoghurt or kefir, fruits, eggs and other foods that provide other nutrients to create a healthy, balanced meal. Ok, hear me out. If your mission in life is to avoid all UPFs, you’re too worried. Now I’m not saying we shouldn’t eat LESS UPFs - we should. And I’m not defending the food industry. They’ve got a lot to answer for and should be held accountable. BUT this scaremongering that’s caused people to become terrified of anything that even whiffs of UPF is doing my nut in. And can we also acknowledge that some UPFs are genuinely useful? What good would slapping a warning label on things like baked beans, wholemeal bread and fish fingers do? And because we all eat, we all feel like experts, right? So now everyone’s got these really strong opinions on UPFs without much understanding of the science and evidence behind them. HOWever, there is no universally agreed definition of UPF. And the research we have so far is mostly observational (it can’t prove cause and effect). 
We also don’t have solid HUMAN data showing the real-life impact of additives/emulsifiers in amounts we’d typically eat. So when I see headlines (or ch4 documentaries 👀) blaming UPFs for every health issue under the sun, I can’t help but ask - how? How can we confidently say something we can’t even define properly is the cause of disease? Is it really the level of processing that’s the issue… or is it just the salt, sugar, and sat fat in foods that are typically UPF? We don’t know yet. And when you compare people eating mostly packaged snacks to people eating mostly home-cooked meals, then of course the latter comes out on top. What I’d actually like to see is a study comparing people eating something like an ultra-processed lasagne to a homemade lasagne. That would be more interesting. At the end of the day, I wish the messaging around how we should eat came with less scaremongering and more encouragement to eat a diverse diet, drink more water, stress less and sleep more (and more campaigning to make food more accessible wouldn’t go amiss).

After cutting out ultra-processed food, the difference can be dramatic. Ultra-processed foods (UPFs) make up about 57 percent of the average adult diet and 67 percent of children’s diets. On a high ultra-processed food diet, people consume around 500 extra calories per day, often without realizing it, partly because most people eat two to four times the listed serving size. These foods are engineered to be addictive, with about 14 percent of adults and 12 percent of children meeting addiction criteria, similar to alcohol and tobacco. Over time, this adds up, with ultra-processed food consumption linked to 10.5 percent of all premature deaths. In as little as three days after removing ultra-processed foods, cravings can begin to fade and appetite regulation starts to return. Make the change and cut out UPFs for good. 🗣️ Let’s not demonise baked beans, fish fingers, oat milk or wholemeal bread (to name just a few healthful UPFs!)… Instead, let’s focus on the UPFs we really should be eating less of - like fizzy drinks, confectionery and fast food. These are the products that tend to be high in calories, saturated fat, salt or sugar, and low in the fibre and nutrients that support long-term health. At its core, the UPF conversation isn’t just about what these foods contain, but what they lack. Many ultra-processed foods are energy-dense and nutrient-poor - and that combination, rather than the processing alone, is what’s linked with poorer health outcomes. But that doesn’t mean all UPFs are the same. Some are more nutritious, convenient, and can absolutely form part of a balanced lifestyle - especially when you’re feeding a family or juggling a busy life. So instead of fear or scaremongering, let’s encourage people to: ✨ cook a little more at home ✨ base meals and snacks on whole foods most of the time ✨ choose more nutritious UPF options where possible ✨ understand ingredients without obsessing over them ✨ and take an 80/20 approach that supports both health and enjoyment 💃🏻 Because health isn’t about perfection - it’s about patterns, context, balance and confidence. ✨When it comes to UPFs and weight loss there is some blurred lines as lower calorie options do help people to lose weight which comes with health benefits but having lots of caking agents, chemical oils and sugar unecessarily in ingredients, personally feels worse. Evidence is mixed and still emerging and going back to basics of home cooked meals where you know exactly what’s in your meal is good for me! 💾 Save for next time you need inspo! I don’t track calories anymore but if your goal is to lose weight I recommend using app my fitness pal to put the calories in and weigh out eat meal so you know exactly how many calories per day you are having. After 2 years of doing this I know how much to eat and portion sizes to still lose weight or maintain. A new paper from the Singapore Chinese Health Study (n ≈ 62,000; ~25 years follow-up) found that people who ate the most ultra-processed foods (UPFs) had slightly higher mortality risks compared to those who ate the least: ⚰️ All-cause mortality: +6% ❤️ Cardiovascular mortality: +8% 🫁 Respiratory disease mortality: +10% 🧬 Cancer mortality: No significant difference Those increases are small—and likely explained by higher total calorie intake and poorer overall diet quality, not the “processing” itself. 🔹 UPFs aren’t all the same — protein shakes and whole-grain bread aren’t in the same category as soda and candy. 🔹 Labeling foods as “killers” misses the point: context matters. 🔹 Focus on total diet quality, nutrient density, and energy balance — not fearmongering headlines.
