Imagine perfectly roasted cauliflower florets with caramelised edges drizzled with a creamy lemon herb sauce. It is irresistible! Ingredients: -1 medium cauliflower, cut into florets -1 tablespoon extra virgin olive oil -1/2 teaspoon salt, or to taste -black pepper Sauce -2 spring onions -1 bunch fresh parsley -1/2 teaspoon salt -2 slices green chilli, or more if you like spicier -lemon zest from 1 lemon -juice from half lemon -3 tablespoons extra virgin olive oil Instructions: 1. Preheat your oven to 210 degrees C. 2. In a large bowl toss together the cauliflower florets, olive oil, salt and pepper. 3. Line a baking tray with parchment paper and add the florets in a single layer. Roast for 20-25 minutes, or until the edges are browned. 4. For the sauce, add all the ingredients in a food processor and blitz to make a thick sauce. Taste and adjust the seasoning if needed. 5. Toss the cauliflower with the sauce and serve. Enjoy!
