PROTEIN BAGELS 🥯
Makes 4 bagels
Ingredients:
- 1 cup self raising flour
- 1 cup cottage cheese
- 1 egg, whisked
Plus any topping of preference
Method:
1. Preheat oven to 190°c
2. Blend cottage cheese until smooth in a high speed blender or food processor.
3. Transfer it to a medium bowl and add the flour. Mix until completely combined and the dough starts to pull away from the sides of the bowl.
4. Tip the dough onto a lightly floured bench and knead 1-2 minutes until smooth.
5. Roll the dough into a ball, portion into 4 equal pieces. Roll each ball into a log, about 15-18cm and then pinch the ends together to make a circle. Lay all four on a lined baking tray and brush with the beaten egg. Add any toppings you desire.
6. Bake in the preheated oven until puffed and lightly golden, 25-30 minutes. Allow to cool for 15 minutes before serving.
Bagels will keep for around 4 days in an airtight container.
