NEHaitian Akra With Chicken, Crispy Malanga Fritters
Crispy Haitian akra made with grated malanga, epis, herbs, and a chicken twist.
No saltfish. Crispy outside, soft inside.

Ingredients
Malanga, peeled and finely grated
Epis
Parsley and thyme
Scotch bonnet, optional
Bouillon or all-purpose seasoning
Black pepper
Shredded cooked chicken
Oil for frying
How to make it
1. Grate malanga into a sticky paste.
2. Mix in epis, herbs, pepper, and seasoning.
3. Fold in shredded chicken until evenly mixed.
4. Heat oil until hot, not smoking.
5. Slide long strips of batter into the oil.
6. Fry until deep golden and crisp. Drain and serve hot.
