LAAroace White Chocolate Cookies

WHITE CHOCOLATE DOUGH
113g unsalted butter
75g sugar
2tsp vanilla paste
1 tsp salt
90g melted white chocolate
1 egg yolk
210g all purpose flour
Orange, yellow, white, light blue, blue gel food dye
Preheat your oven to 350F and line a baking sheet with parchment.
Using a stand mixer fitted with a paddle attachment (or using a hand mixer) beat unsalted butter, sugar, vanilla, salt, and melted chocolate until the mixture is creamy and light, scrape down sides of the bowl as needed (about 3 min). Add egg yolk and mix until well combined. Add the flour and mix until a dough forms.
Divide the dough into five equal portions (about 100g each) and dye each a different color (orange, yellow, white, light blue and blue). Flatten each portion into approximately a 3” x 3” square. Wrap each shaped portion in plastic wrap and place in the fridge for about 15-30min. Stack the dough with blue on the bottom, followed by light blue, white, yellow, and finally orange. Gently press the dough together and shape into a log with sharp edges. Freeze the log for approximately 15-20 minutes.
Cut the block into about 8-10 cookies Transfer the cookies to the sheet and bake for 12-15 min depending on thickness of the cookies and desired crunch level.
