I discovered this method from @merryboosters years ago and it has been my go-to ever since 🙏🏼❤️ . ▪️390g (or ~3 Cups) Artisan Bread Flour or All Purpose Flour▪️2 tsp Sugar▪️1+1/2 tsp Salt▪️3/4 tsp Instant or Active Dried Yeast▪️300ml (1+1/4 Cups) Water▪️Butter, for serving▪️ . 1️⃣ In a large bowl mix together the flour, salt, sugar and yeast 2️⃣ Add some lukewarm water (~95°F) and mix everything together to form a shaggy mass of dough 3️⃣ Cover the bowl with plastic wrap and let sit and rise in a warm environment for about 2 hours 4️⃣ After 2 hours, preheat the oven to 450°F with a Dutch oven inside (so the Dutch oven gets preheated as well) 5️⃣ Transfer the dough on to a floured work surface (the dough will be sticky so dust it with some flour whenever needed); knead the dough (fold it on to itself, turn, and repeat) for 2-3 mins until a tensive dough ball forms 6️⃣ Transfer to a proofing basket or parchment lined bowl, cover and let rise for 35 mins or until the dough doubles in size 7️⃣ Place the dough ball in the preheated Dutch oven lined with parchment and bake at 450°F for 30 minutes; reduce the oven temperature to 400°F, remove the lid, and bake for another 10-15 more minutes (at this point the longer you bake the bread the crispier the crust will be.. just make sure the bottom doesn't burn) - enjoy with salted butter! . Note: If you are making bread on a regular baking tray instead of a Dutch oven, steam is the key factor for making crusty bread. Place a pan with hot water in the lowest rack of oven while baking and spraying with water inside the oven during the initial five minutes of baking to help create this steamy environment inside the oven. . ⏲ 10 minute prep time + 2 hour 35 minute rise time + 40 minute cook time

This can happen for several reasons — not just hydration 1- Reason: Gluten is NOT developed yet Why it happens: Too few stretch & folds Folds done too gently or too quickly Dough didn’t get enough resting time How to tackle: Add 1–2 more sets of stretch & folds Keep 30–45 min gap between folds Stretch till resistance, don’t tear Reason 2- Hydration is too high for that flour Why it happens How to tackle: • Reduce water by 2–5% • OR switch to stronger flour • start at 65–68% hydration “Not every flour can hold high hydration.” 3- Reason: Dough is over-fermented Why it happens: • Too warm environment • Long bulk fermentation • Starter too strong or used in excess Signs: • Dough feels loose & sloppy • Tears while folding • Sticks even after folds How to tackle: • Reduce bulk time • Use cooler water • Reduce starter percentage slightly “Over-fermented dough loses strength and becomes sticky again.” 4- Reason: Starter is weak or unbalanced Why it happens: • Starter used before peak • Too acidic starter • Inconsistent feeding Signs: Dough feels sticky but doesn’t stretch well No strength even after folds How to tackle: Use starter at peak or just before peak Feed regularly for 2–3 days before baking Maintain correct feeding ratio “Strong starter = organised dough.” Sourdough dough strength, stretch and fold technique, gluten development, sourdough fermentation, dough hydration, clean bowl test, sourdough troubleshooting, bulk fermentation tips, sourdough baking class, artisan bread making #SourdoughBasics #StretchAndFold #GlutenDevelopment #SourdoughTips #ArtisanBread

World’s Easiest Yeast Bread recipe - Artisan, NO KNEAD Ingredients 3 cups (450g) flour , bread or plain/all purpose 2 tsp instant or rapid rise yeast 2 tsp cooking /kosher salt 1 1/2 cups (375 ml) very warm tap water , NOT boiling or super hot 1 1/2 tbsp flour , for dusting Mix Dough: Mix flour, yeast and salt in a large bowl. Add water. Dough will be wet and sloppy – not kneadable, but not runny like cake batter. Adjust with more water or flour if needed for right consistency. Rise: Cover with cling wrap or plate, leave on counter for 2 - 3 hours until it doubles in volume, it’s wobbly like jelly and the top is bubbly. If after 1 hour it doesn’t seem to be rising, move it somewhere warmer Preheat oven - Put dutch oven in oven with lid on Preheat to 230°C/450°F 30 minutes prior to baking. Shape dough: Sprinkle work surface with 1 tbsp flour, scrape dough out of bowl. Sprinkle top with 1/2 tbsp flour. 
Transfer to paper and fold the sides inwards (about 6 folds) to roughly form a roundish shape and sprinkle with additional dough on top. Dough in pot: Remove piping hot dutch oven from oven. Use paper to place dough into pot, place lid on.
 Bake 30 minutes covered, then 12 minutes uncovered or until deep golden and crispy.

This loaf of bread went from an amateur mess to the best bread I’ve ever baked 😅 I definitely messed up when I placed the dough in the banana whatever you call that bread basket thingy. 😂 But it’s okay because that bread turned out SO good! The best ever actually. I got the easy recipe online. 3 cups of flour, 2 tsp of yeast, 2 tsp of salt, 1 1/2 cups of warm water mix it all together let it sit for 2-4 hrs in a warm place covered and then take out and fold 6 times then shape into a ball (that’s when I scored it) pre heat oven to 450 and place your Dutch oven with lid on in the oven to preheat. (Your Dutch oven is what you bake the bread in its round with a lid & specially for artisan bread as opposed to a sandwich loaf of bread) then bake at 450 for 30 min with lid on, then 12 min with lid off. So easy peasy! Credit to Tincan. Winnipeg, MB Red River Co-op If you want to cast a vote for Irene’s recipe, just LIKE is reel! Ingredients: 1 block (250 g) Co-op Gold cream cheese 1 tbsp grated orange peel 1 large fresh orange, juiced 2 tbsp brandy extract or brandy 2 cloves garlic 2 cups grated cheddar cheese 1/2 cup pecans, chopped Directions: In a food processor, blend cream cheese and grated orange peel. Add fresh squeezed orange juice and blend until smooth. Then add Cheddar Cheese and Garlic. Blend until smooth. Chop pecans. Spread Cheese mixture into a nice serving dish. Top with chopped pecans. Refrigerate or freeze until ready to serve. Serve with crackers or artisan bread on a nice charcuterie board. “This recipe includes alcohol as an ingredient, but the alcohol content will be significantly reduced through the cooking process. For a non-alcoholic version, you can substitute a non-alcoholic ingredient.”

This is my go to Sourdough Artisan Bread Recipe ⬇️ It is my BASE for all my other artisan loafs whether they are sweet or savoury. But First, follow me @the.sourdough.girl to follow alongside my sourdough bread journey. A few weeks ago, I had the incredible opportunity to attend an instructor-based course @chocolateacademymontreal alongside some of Canada’s top baking instructors. Our focus? Mastering the art of ice cream and chocolate. While this was way out of my comfort zone it was a really eye opening course. 🍦 We spent time developing the perfect ice cream formula to ensure a balance of taste, texture, consistency, and smoothness. In teams, we crafted unique desserts using our chocolate ice cream creations. My station partner and I made an epic dessert featuring chocolate ice cream and exotic fruit sorbet, complete with Pâte à Choux and a pineapple compote. Shoutout to my amazing partner – couldn’t have done it without you! The experience was eye-opening. Just like in sourdough baking, perfecting an ice cream recipe requires understanding the unique properties of each ingredient. Adjusting hydration levels and fermentation times in bread is akin to tweaking ingredient ratios and techniques for different chocolates. Working with @russ.thayer and @chefdutertre was incredibly inspiring. Their passion for ice cream and pastries mirrors my love for sourdough and artisan bread. It reminded me that no matter how much experience you have, there’s always something new to learn and master.
