I’m bringing back my famous beet pasta just in time for Valentine’s or anytime you need a fun pasta recipe:)
Turn roasted beets into this creamy & flavorful
BEET RICOTTA CHEESE PASTA! I am a beet girl & if you don’t like beets-be prepared to change your mind with this pasta recipe!
Use any pasta shape or style you want & if you don’t have time to roast beets you can use pre-steamed ones BUT the pasta won’t be as pink as shown in video!
Ingredients-
1 pound pasta of choice
1 pound of beets about 4 medium/small
2 tbsp olive oil
1 shallot unpeeled
4 garlic cloves unpeeled
2 cups of ricotta cheese whole milk divided
1/2 cup Parmesan cheese
1 lemon zested & juiced
1/4 tsp nutmeg
1/2 tsp salt
Pepper
1/2-3/4 cup reserved pasta water
Toppings-whipped ricotta
Crushed pistachios
Parmesan cheese
fresh mint
Olive oil
Flaky sea salt
Preheat oven to 400 degrees & line a sheet pan or dish with foil. Wash your beets well then drizzle 1 tosp olive oil, S&P on the beets & rub together. Wrap them with foil tightly then place them on the sheet pan. Do the same thing with the garlic cloves & shallots. Cook in oven for 35-40 min until the beets are tender. The shallot & garlic will be ready in 30 min.
Boil salted water for the pasta while the beets cook. Once beets are cool to touch-rub the skin together with a paper towel until the skin comes off or you can use a peeler. Add all of the ingredients including 1 cup of ricotta & 1/3 cup of the reserved pasta water (you will use more water later) blend until it reaches a smooth consistency. Pour into a pan to warm up a little using more pasta water to thin out. Add the drained pasta to the sauce & mix together until combined adding more pasta water if needed. Add the other 1 cup of whipped ricotta & lemon zest to a small food processor & blend until creamy.
Top the whipped ricotta on the pasta including the other toppings-Parmesan, olive oil, fresh mint, pistachios, S&P
