MARoasted Beets with Garlic Dill Greek Yogurt 🫶✨
INGREDIENTS:
• 2 medium beets
• 1 cup plain Greek yogurt @libertecanada
• 3 garlic cloves, minced
• 1–2 tbsp fresh dill
• 1–2 tbsp olive oil @iliada_olive_oil
• salt @wholefoodscanada
• black pepper
• Juice of lemon
INSTRUCTIONS:
1. Preheat oven to 400°F (200°C).
2. Wash the beets. Wrap them tightly in parchment paper, then wrap again in foil.
3. Bake for 1 hour 15 minutes, or until fork tender. Let cool slightly, then peel and cube.
4. In a bowl, mix Greek yogurt, minced garlic, lemon juice, salt, pepper, and chopped dill. Adjust seasoning to taste.
5. Spread the yogurt mixture onto a serving plate.
6. Top with cubed roasted beets.
7. Drizzle with olive oil and sprinkle extra fresh dill on top.
