Down Here ⬇️ Bulk fermentation is the long rest after you mix your dough. This is when your sourdough starter eats the flour and makes gas. That gas is what helps your bread rise. Bulk fermentation is not about the clock. It is about what the dough looks and feels like. During bulk fermentation, your dough should slowly grow, look puffy, and feel lighter. It should not stay flat. It should not feel tight or stiff. A common beginner mistake is ending bulk fermentation too early because the dough did not double. Some doughs do not double. Instead, look for about a 30 to 50 percent rise, a smooth surface, and small bubbles under the dough. If bulk fermentation is too short, your sourdough bread will be dense. If it goes too long, the dough becomes weak and sticky. Learning this step is one of the biggest changes beginner sourdough bakers can make. If you are a beginner sourdough baker and bulk fermentation feels confusing, follow along. You will need: ~3 cups large cubes of bread (I used ciabatta in this video) 4 tbs extra-virgin olive oil 2 cloves fresh garlic (minced) 1 tbs granulated garlic 1 tbs garlic powder 1 tsp paprika Kosher salt Parmasean cheese Steps: 1. Preheat oven to 350°F 2. Toss cubed bread in a medium bowl with olive oil, garlic, paprika, and salt 3. Arrange in a single layer on a baking sheet fitted with parchment and bake until browned (10-12 minutes) 4. Toss with parmesan 5. RZ Sandwich Bread Yield: 1 standard loaf Ingredients 1 1/2 to 2 cups warm water about 105°F - 110°F warm, not hot 2¼ tsp active dry yeast or 1 packet 2 tbsp honey or sugar 2 tbsp olive oil or melted butter 1 1/2 tsp salt 3½ cups all-purpose flour or half AP + half bread flour for extra chew (plus more as needed) Directions • In a small bowl or liquid measuring cup, combine the warm water, yeast, and honey/or sugar. Stir gently and let sit for 5–10 minutes, until the mixture becomes foamy and activated. Stir in the salt and oil. • To a large bowl, add the flour and pour in the yeast mixture. Using a wooden spoon or Danish dough hook, mix until a soft, slightly tacky dough forms. • Knead the dough for 5–7 minutes by hand or 3–4 minutes using a stand mixer until smooth, elastic, and cohesive. • Place the dough into a lightly greased bowl, cover, and allow it to rise for 25–30 minutes, or until doubled in size. While it rises, grease a loaf pan and set it aside. • Once doubled, gently punch down the dough to release excess air. Fold the dough into itself, then transfer it to a lightly floured work surface and gently stretch it out. • Shape the dough into a loaf using a tuck-and-fold method, creating surface tension as you roll it into shape. Place the shaped dough into the prepared loaf pan, cover, and let rise again for 15–20 minutes. • Bake at 375°F (190°C) for 25–30 minutes, or until the loaf is golden brown and sounds hollow when tapped. • Immediately brush the top with butter or olive oil for a soft, tender sandwich crust. • Remove the bread from the loaf pan and transfer it to a cooling rack to prevent the bottom from becoming soggy. • Allow the bread to cool for at least 20 minutes before slicing. HOW TO MAKE SOURDOUGH STATER FROM SCRATCH ⬇️ Let me know if you want a sourdough bread recipe in the comments xx This is one of my most requested videos 🥹 To make the starter: combine 100g flour and 50g water. You can use plain, strong, or wholemeal flour. Place in a clean and well rinsed jar. Cover with a lid and cut a whole in the lid or just plastic wrap and a hole. Let sit for 24-48 hours at room temperature: once it looks bubbly then you can start feeding it. To the feed the starter: weigh out 100g of the starter (discard the rest), and combine with 100g flour and 50g water. Leave out at room temp for at least a week, and feed in the same way every single day. Note: you only have to discard the rest in the first week before the starter is ready! After that you use the excess to make bread etc! After a week: the sourdough starter should be bubbly, have a more mild smell, and then you can put it in the fridge. Note: it can take up to 14 days - check the smell and the appearance! After that, feed it only once a week in the same way (100g starter, 100g flour, 50g water) Let me know if you have any questions ❤️
