How to get a light sponge cake
This is exactly why I love making sponge cake. When it is done right, it is soft, airy, and so beautiful to work with. A light sponge is all about the small details.
Always make sure your oven is at the correct temperature. I use an oven thermometer because you cannot always trust the oven display, and temperature makes a huge difference.
Have all your ingredients at room temperature. It helps everything blend together smoothly and keeps the batter stable.
Use a lower protein all purpose flour and avoid bleached flour. The right flour gives you a softer, more delicate texture.
Use light touches when you incorporate the flour. Do not overmix. I love using my whisk attachment very gently to keep the batter airy.
If you want a lighter bake, divide the batter into multiple pans. When you bake everything in one pan, the cake will be darker and heavier. Dividing the batter helps it bake more evenly and stay light.
And do not forget to grease your wire rack before flipping the cake, or it will stick to the top.
These little details are what make the difference between a heavy cake and a light, fluffy sponge.
