KAPROPER MASALA CHAI ☕🇮🇳🔥
Every chai vendor in India has their secret recipe, which often involves boiling milk with strong loose leaf tea leaves, spices and herbs. This is my recipe for a glass of pure nostalgia and comfort.
1 cup water
1 cup full fat milk
2 tsp black tea leaves
3 cardamom pods
1 inch ginger, crushed
1/3 tsp black pepper
1/3 stick cinnamon
Jaggery, Sugar or sweetener, to taste
Boil the spices and ginger in water for a minute.
Add the tea leaves and boil for another minute.
Add the milk and continue boiling for 3-4 minutes, stirring occasionally.
Strain and serve.
PS: cutting chai is the term used for half glasses of chai served on the streets of Mumbai.
