This week we created these elegant Matcha Bonbons for a client.
Matcha, the vibrant, finely ground green tea from Japan, brings a beautiful balance of sweetness, creaminess, and a subtle earthy bitterness. Rich in antioxidants and color, it pairs perfectly with smooth white chocolate 🍫🍵
Here’s our Matcha Ganache recipe, simple, silky, and full of flavor:
Matcha Ganache
Ingredients
• 200 g white chocolate (high quality, couverture recommended, @callebautchocolate)
• 120 g heavy cream (35% fat)
• 20 g unsalted butter (room temperature)
• 6–8 g matcha powder (adjust to taste)
• 10 g glucose syrup (optional, for smoother texture & longer shelf life)
• A pinch of sea salt (optional, to enhance flavor)
Instructions
1️⃣ Heat the Cream — Warm the cream and glucose syrup to about 80–85°C. Remove from heat.
2️⃣ Mix the Matcha — Whisk the matcha with a spoonful of hot cream to form a smooth paste, then blend it back into the cream.
3️⃣ Melt the Chocolate — Pour the hot matcha cream over the white chocolate. Let sit for a minute, then stir until smooth and glossy.
4️⃣ Add the Butter — When the ganache cools to around 35°C, add the softened butter and emulsify with a hand blender until silky.
5️⃣ Fill Your Bonbons — Once the ganache is around 30°C and pipeable, fill your chocolate shells. Let set before closing.
