GRCorned Beef & Cabbage
Add to a large pot:
3-4lbs Corned Beef
2-3 onions, sliced
2-3 cloves of garlic, minced
1 bottle Dark Beer
4 cups Beef Broth
Simmer on low heat for 2 1/2 hours
Remove meat from heat and let rest 15 min.
*This is a good time to scrape off and discard any excess fat
Add:
8 carrots, cut into pieces to the pot (or more if you like carrots)
Cook on medium heat about 15 min.
Then add:
1 large Cabbage quartered, cook for about 10 min more, or until easily pierced with a fork
Make a rub:
1/4 cup brown sugar
1Tbs whole grain mustard
Mix together and coat Corned beef
Place Corned Beef in the over set to Broil for 5 min or so, until a bubbling crust begins to form
Serve Corned Beef with cabbage and carrots, top with freshly chopped parsley
For my creamy mashed potatoes-
I boil potatoes in salted water
Boil 6 Yukon Gold potatoes
And 2 large Russet potatoes
Melt two sticks of butter
Stir in 1/2 cup heavy cream
1 tsp white pepper
Salt and pepper to taste
Whip until smooth and creamy
