Using a Wittig reaction, benzaldehyde is converted into trans-stilbene, a rigid, highly ordered molecule made of two phenyl rings connected by a C=C bond. Its symmetry allows the molecules to pack very efficiently, which leads to sharp, layered crystal structures. What fascinates me is that this strict molecular order gives rise, during crystallization, to fluid, organic forms. Under the microscope, these patterns really look like leaf veins, river flows, and geological layers,the same structures appearing from the molecular scale to natural landscapes. #chemistry #organicchemistry #crystallization #scienceart #artandscience

I did this video back in 2019 showing how water can be supercooled waiting for something to start the ice crystallization process. Many saw the videos from the Kansas City game yesterday, so I wanted to reshare this video. More Instant ice. Using supercooled purified water, I left it outside in 20° weather. The water is below freezing but doesn’t have anything to start the crystallization process on. If you introduce bubbles, the ice can start forming, and it does so quickly. It's a fun little science trick to try with the kids and a cool way to show that water doesn’t always freeze at 32°. #cltwx #ncwx #scwx #science #wcnc #wxbrad

It's called supercooling. Pure water without impurities can stay liquid down to minus 48°C. It just needs a nucleation point to crystallize: a dust particle, air bubble, or micro-crack. A tap creates a shockwave that triggers it. Crystallization cascades: each new crystal releases heat, but neighboring molecules restructure faster than the heat can warm them. The bottle freezes top-down because that's where micro-bubbles concentrate. Clouds are made of the same supercooled droplets. Here we can see that frictionation is very important in order for a chocolate to form it’s crystallization , tempering for me is where we make chocolate crystals (beta five/V) stable and bond themselves one to another so it can create a solid form. Without frictionation that forms crystallization, a melted couveture chocolate won’t be able to crystalize itself even through cold temperature and a period of time.
