Chipotle Chicken Recipe
Marinade
• 1 full can chipotle peppers in adobo (about 330 g)
• ~30 ml fresh lime juice
• 1 tbsp adobo seasoning
• 2 tsp ground cumin
• 2 tsp onion powder
• 2 tsp dried oregano
• 1/2 tsp smoked paprika
• ~300 ml water
Blend everything until completely smooth.
Chicken
• Boneless, skinless chicken thighs (use as much as you want)
Add chicken to a ziplock bag or bowl and pour in enough marinade to fully coat. Mix well and marinate in the fridge — longer is better.
Heat a pan to medium-high, spray with avocado oil (or any high smoke-point oil), and lay the chicken down away from you. After placing it in the pan, sprinkle a pinch of kosher salt on top.
Cook about 5 minutes per side, flipping as needed, until the internal temp hits 165°F.
Remove, cube it up, plate it with rice or whatever you want, and enjoy!
