anti inflammatory coconut chicken dahl 🥥 oh my gosh, I am in love with this dish. Subtle flavours, coconutty sauce and such a beautiful staple to have for dinner prep. Warming, nourishing and very fragrant. Ingredients; •500g chicken thigh or breast •1 400g can coconut milk •300g chicken broth •1/2 cup red lentils •1 white onion •3 cloves garlic •1 thumb size ginger •spices; 1 tbsp coriander seeds, 1/2 tbsp fennel seeds, 1 tbsp cumin seeds, 1 tsp turmeric, 1 tbsp cinnamon (ground up or blitzed in a spice grinder) •1/4 Kent pumpkin •big handful of greens; I used silver beet •bunch of fresh coriander •salt to taste Directions; 1.start by boiling your lentils, once boiled keep it boiling for 5 minutes. Then take it off heat and rest it for at least 30 minutes 2.using the same pan, heat up some ghee or oil and on low heat soften your onion, garlic and ginger 3.add your spices and chicken, stir, let it simmer for a few minutes -> keep adding salt at each step to taste 4.add your pumpkin, coconut milk, lentils, and broth then simmer on low to medium heat for 25-ish minutes 5.once pumpkin is softened and mixture is thickened, add in your greens and a big handful of chopped, fresh coriander and then take off the heat Enjoooy! this is the biggest pleasure to eat. The freezer and microwave are some of my favorite timesavers in the kitchen so that I’m able to get healthy food on the table! Shortcuts are never something I feel guilty about because I just couldn’t get a balanced meal on the table most nights without them. My husband travels a lot for work, and even when he’s in town, he’s typically at the office late. That means dinner prep is my job (which I’m fine with!) but that means I have to make the best use of my time and energy when I’m solo. Also for this reason— I made a Dinnertime Survival Guide, that has 6 weeks worth of healthy weeknight meals you can make in 15 mins or less, using shortcuts! Most families don’t really use it as a meal plan, but more to get ideas for dinners to make on the nights you know you will only have a few minutes to throw something together. Frozen foods are not any less nutritious, and the microwave doesn’t zap all the nutrition away 😊 it’s okay to use shortcuts to get a meal on the table!!

4-Day High-Protein Vegetarian Meal Prep 🍱✨ Here’s everything I prepped in one go — breakfasts, lunches, dinners & a dessert ⬇️ 🥣 Breakfast (4 Days Sorted) ✅️80 g rolled oats ✅️2 tbsp chia seeds ✅️400 g thick Greek yogurt(turbo greek yogurt) ✅️Water (for consistency) ✅️4 tsp monk fruit sweetener Mixed everything together & divided into 4 servings. ➡️ Each morning I’ll just add any fruit + a spoon of peanut butter and breakfast is ready in 2 mins. 🍛 Lunch Prep (4–5 Meals) 1️⃣ Moong Dal–Quinoa Veg Mix ✅️Mixed veggies ✅️Ginger–garlic paste & spices ✅️1–2 tsp oil total ✅️½ cup moong dal (soaked) ✅️½ cup quinoa (soaked) Cooked together → makes 3 meals 👉 I’ll pair this with paneer on the side. 2️⃣ Paneer Broccoli Bhurji ✅️140 g low-fat paneer ✅️Broccoli + spices This gives 2 meals, usually paired with rice. ➡️ Total: 4 lunches + 1 meal can be used for dinner if needed 🌮 Dinner Prep (3 Meals) ✅️soya Chunk–Rajma Protein Patties ✅️100 g soya chunks (boiled) ✅️1 cup boiled rajma ✅️onion, broccoli & spices Blended, shaped into patties & layered with butter paper for storage. ➡️ Pan-fry when needed & eat with green chutney or yogurt dip. 🍫 Dessert / Snack (Craving Saver) No-Bake Chocolate Bites 70% dark chocolate Crushed almonds 2 tbsp peanut butter 100g yogurt Mixed, shaped into bites & coated again with dark chocolate 🍫 Perfect for sweet cravings without guilt. ✅ Total Prep Outcome ✔️ 4 breakfasts ✔️ 4 lunches ✔️ 4 dinners ✔️ 1 dessert stash One prep = stress-free eating all week 💪 Saving time, money & decision fatigue ✨
